Broccoli Chicken Casserole I

Reviewed: Jan. 6, 2013
I needed a quick recipe and this was perfect. I made some changes that others mentioned and they worked. I, too, seasoned the boiling water/stock in the pot of boiling chicken. Instead of mayo, I used a TBSP of greek yogurt and added a large clove of pressed garlic to the mix. I didn't layer but just mixed everything together and added plain bread crumbs and shredded cheese to the top. The baking time was correct at 25 minutes and it was great. While I'm not a huge fan of condensed-soup based meals, this was really good.

Invited to a neighborhood cookie exchange and several neighbors requested (demanded) I make these. They were incredibly easy but really tasty.

Soda Cracker Cookies

Reviewed: Dec. 22, 2010
These are my go-to cookie for Christmas cookie parties. They are so fun and easy. Someone mentioned that the crackers were floating on top of the butter- that won't happen if you boil the butter and sugar long enough. It will have a sticky consistency at just about 3 minutes- stir constantly. Everything was by the book and they turned out great. I, too, crushed pretzels and they were awesome.

Peppermint Bark

Reviewed: Dec. 22, 2010
Love these! I, too, left out the oil and they turned out wonderful. I melted them in the microwave and it took literally minutes. That being said, after the dark chocolate layer, keep in the freezer for about 10-15 minutes or you'll get the muddying everyone talks about. I just put the white chocolate layer on carefully and moved it around like frosting on a cake since it didn't "pour". I added red sprinkles to the peppermint on top and it was gorgeous for my Christmas cookie party!

Hummus III

Reviewed: Sep. 29, 2010
I agree that this is really good but too thick. Next time (which will be very soon) I will reserve the liquid from the beans and cut back slightly on the tahini. I actually thought the lemon and garlic amounts were perfect. I left out the parsley because I didn't have any and will probably keep it out. Very, very good.

Chicken and Artichokes

Reviewed: Sep. 16, 2010
I made this last night but didn't have some key ingredients like mushrooms and sherry but it still turned out really well. My kids loved it (3 and 1) which was shocking but I put it over whole wheat spaghetti and they call it white spaghetti. Will make it into our rotation for sure.

Angie's Dad's Best Cabbage Coleslaw

Reviewed: Sep. 4, 2010
This was really good. I agree that it's best after sitting for at least a day. I also used apple cider vinegar instead of white vinegar and cut the sugar in half. Will make this again.

Cara's Creamy Stuffed Shells

Reviewed: Dec. 23, 2009
I made this for a dinner party and took some advice from the other reviewers. I used manicotti instead of shells. I browned 1 lb lean ground turkey and 1 package sweet italian sausage with onion, garlic and italian seasoning since I had no fresh herbs. I also used only 1 egg and did 1/2 cream cheese and 1/2 ricotta. I also used 2 1/2 jars of sauce. I made it in advance and set in refrigerator for about 2 hours then cooked at 400 for 30 minutes covered, 15 minutes uncovered with last 5 on broil for the cheese.

Whole Wheat and Honey Pizza Dough

Reviewed: Dec. 23, 2009
I made this recipe 4 or 5 times before it finally came out right. I love the recipe and it's yummy but the crust never rose and was like wet cardboard. I finally omitted the wheat germ and allowed the yeast to rise for 45 minutes. Also, I added about 2 TBSP of olive oil. When it finally worked, it was great.

Busy Day Barbeque Brisket

Reviewed: Oct. 4, 2008
I'm from Texas and now live in AZ. I was looking for a brisket recipe to cook for the Fall football season. This recipe is wonderful. My husband is a big "meat" guy and found this recipe perfect. I did add a little more cayenne pepper and use "Woody's" bbq sauce. I also use Emeri's original seasoning instead of paprika. I cooked it on low for 6 hours and then added about 1/4 cup water... let it sit on warm for about 3 more hours. Fantastic. Great recipe.

Incredibly Cheesy Turkey Meatloaf

Reviewed: Feb. 19, 2007
My husband and I loved this recipe. I did make some of the changes recommended- I some worcestire sauce and shredded cheese but the basic recipe was just the best. Super easy, too. I always make this meal when someone has a baby, etc. and everyone asks for the recipe. My kids even love it and they are 3 and 1.

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

Reviewed: Apr. 4, 2006
This was fantastic. My husband is not a HUGE tomato fan but said it was a keeper. I followed the recipe exactly (except I added more garlic) and loved the balsamic and feta- great combinations. I would recommend it.

Best Ever Chicken Casserole

Reviewed: Feb. 1, 2006
My husband loved this! I did add less mayo (3 TBSP) and used celery. I also used only 1/2 cup onion. I cooked for only 45 minutes and it was perfect- not soupy at all. I highly recommend this SIMPLE recipe. Even I could do it.
