Originally from Florida, used to using tropical ingredients and cooking southern style and with a lifelong appreciation for excellent iced tea. Now in Oregon, loving life, getting used to having four real seasons, and learning to use local fresh ingredients as they come into season here in the Pacific North West.
My favorite things to cook
I love using fresh ingredients as much as possible, they always make a difference in the final taste of the dish. I love the fresh and smoked salmon, Dungeness crab and chanterelle mushrooms we get here. World-famous cheeses, wines and chocolates are made here locally and add amazingly to the variety of dishes we can prepare from our surrounding providers.

Preparing big spreads for friends and extended family. Nothing makes me happier than sharing my passion for cooking.

Round Steak Sauerbraten
An easy to put together main dish. I subbed diced onion for the onion powder and made my own gravy, preferring that over a mix. Even with those changes, preparation was fast. The meat turned out fall apart tender and was delicious over buttered noodles. I also think this would make a wonderful open-faced sandwich served over toasted sourdough bread.

Pumpkin Apple Streusel Muffins
I liked this recipe with a few changes of my own - I used a mixture of unbleached AP, oat and whole wheat flour; added chopped pecans; used brown sugar instead of white. Please keep an eye on the cooking time, I had to reduce mine. These turned out moist and fragrant with the aromas that tell us the holidays are upon us. They are great with morning coffee or as a snack with hot tea. Hubby loved them, so I will definitely make again.

Cherry Tomato Salad
This is a most incredible salad! I used half red cherry tomatoes and half yellow teardrop cherry tomatoes (they are sweeter than the red ones). This combination added wonderful color and another layer of natural tomato sweetness. I substituted Splenda for the sugar with no change in the flavor. I also doubled the green onions, I love the contrast in flavor they provide. I followed the recipe the first time and added the pine nuts as directed. Now, to make sure the pine nuts retain their toasted crunch, I add them just before serving. This salad also tastes better the second day after overnight marination, IF you have any leftover! Everyone that has tried this salad absolutely loves it!
