Vanilla Wafer Cookies

Although I don't like giving a review unless I followed the recipe to a "T" - I just have to this time. I'm sure that the recipe makes an excellent vanilla wafer type cookie. But I made the following changes and they turned out tasting more like sugar cookies without all the work. Definitely a keeper around here! First of all, I doubled the recipe without any problems or issues. For the sugar, I used 1/2 white granulated sugar and 1/2 homemade vanilla sugar. I also used homemade vanilla extract and unbleached, enriched all-purpose flour. The results are excellent and we will definitely be making these again!

Amish White Bread

I have been making this bread for years - it's a family favorite and at one point was the only bread we were eating (yes - I was making bread 2-3 times per week). Nowadays, I have altered the bread recipe a bit and I still make it 2-3 times a week - it's a staple around our house. This recipe is very forgiving - I have used all-purpose flour, bread flour, white wheat flour, and stone ground white wheat flour (the latter being our favorite). I have also replaced the sugar with 1/2 cup honey and I use butter instead of oil. Oh, and I also replace 1 tablespoon of the flour with 1 tablespoon of potato flour - makes for a very soft bread. I make the dough in the bread maker and bake it in the oven. The only complaint around here is the size of the slices - much too big for sandwich bags for lunches!

Whole Egg Mayonnaise

The recipe is a good starting point from which to make your own mayonnaise. I've tried several different recipes - all of which call for a slow drizzle of the oil. Every time I follow a recipe, it NEVER turns out.... always ends up soupy. For me, I use my immersion blender. I put the egg in first, then add all of the oil. Submerge the blender to the bottom and while keeping it firmly on the bottom, I give a couple of 1/2 to 1 second bursts. As soon as it looks creamy, I start to slowly incorporate the rest of the oil. Once all of the oil has been fully incorporated, I add the other ingredients. I also add a little onion powder and paprika. The thing that I loved about *this* recipe is the whole egg concept.

Best Brownies

I made these exactly as the recipe states and they came out of the oven looking lifeless and dull. The taste is okay, mediocre at best. Not sure what went wrong since it has such rave reviews. I did give it two stars as a benefit of the doubt - I may have mixed it too much putting too much air in the batter. Either way, it's highly unlikely that I will ever make these again. I should have known better.

Lemon Blueberry Bread

I followed the recipe almost exactly (left out 1 tablespoon of lemon juice) and it is very, very good. I should have greased my pan bit more as it stuck to the bottom and that's where all the blueberries were. I will definitely make this recipe again!

Fresh Cherry Crisp

This was excellent! I followed the recipe exactly (only because I don't believe in giving a review of a recipe that I make changes to) and it was delicious! Some of the sugar did stick to the bottom but I probably would not change the recipe. Will definitely make again!

Sesame Pasta Chicken Salad

I made this recipe to use some leftover chicken and it turned out pleasant enough. I used egg noodles cause that's all I had but I think that I will add some garlic to the dressing next time. Even my very picky son loved it!

Cream Puffs

I've made this recipe several times with excellent results EVERY TIME! I've never had a problem with the choux being too eggy or collapsing. As long as the oven temp. is correct (using an oven thermometer) and the directions are followed, the average cook should have no problem making these. I'm anxious to try different variations - such as a chocolate choux with a peanut butter cream. MMMMMM! - experimenting will be fun!

No Bake Cookies III

Recipe turned out just as expected. I used organic peanut butter and I was worried that they wouldn't turn out because of the texture of the PB, but they seem fine. I think I waited until the mixture was at a full boil before I started timing - but I'm not sure. Will probably try exchanging Nutella for the peanut butter next time.

Fried Zucchini

Pretty good. This was my first time using this recipe so I followed the recipe exactly. I'll probably change it up next time. The "batter" never actually formed, even after letting it sit for over an hour. But I cooked it anyway and it turned out so-so. This would probably be very good on okra.

Chocolate Chip Cheese Ball

Made this for our small family Christmas dinner and it was a hit. Followed the recipe exactly and it was very good. Then ate leftovers with vanilla wafers (instead of graham crackers) and it was equally as good. This is definitely a keeper and I am looking forward to experimenting with different ingredients.

Grandma's Eggless, Butterless, Milkless Cake

As a professional cake decorator, I was stumped when a customer asked for an eggless cake because of allergies. So I tried this recipe and added salt as suggested by some of the other reviewers. I tested the recipe first on my family. The recipe made 3 - 6" round cakes. I added mini chocolate chips to one of the cakes. I was thrilled with the outcome. All three of the cakes turned out great! My husband especially liked the one with the chocolate chips. My customer really enjoyed the sample of the cake I took her and placed her order right then! We were both excited to have found an allergy-friendly cake!

Hot Fudge Ice Cream Bar Dessert

I saw this one in the Allrecipe Dinner Tonight cookbook and I had to try it. I did follow the suggestion of putting the chocolate mixture on first, then the whipped topping and it turned out great! I think it has now become our family favorite - at least for now!!

Easy Peach Crisp I

Very good (and easy) recipe! We tried this recipe as a way to use some peaches that were getting too ripe. But we didn't have enough fresh peaches so we added canned peaches too. Turned out wonderfully! We did let it bake a little longer until it browned too.
