About this Cook
I enjoy cooking when I have the time. Since having kids though, my cooking has been reduced to quick, easy, kid-friendly meals. Hopefully one day, I'll be able to return to the kitchen with time to enjoy it.
My favorite things to cook
I love trying new recipes/techniques. My favorite foods to cook are desserts, but I'm quickly learning to love Japanese cooking.
My cooking triumphs
I finally found a spaghetti sauce that everyone loves. Or it could be that I can make cincinnati chili. Or eclair cake. Or a really good cheesecake.
My cooking tragedies
Really this could be any time that I try to cook for guests. But if I have to name one experience, I would have to say it was my cranberry sauce that I made for Thanksgiving dinner. Of course, we had invited people over and I tried a new recipe. Turned out awful!! I have since learned to try new recipes before serving other people!

Amish White Bread
I have been making this bread for years - it's a family favorite and at one point was the only bread we were eating (yes - I was making bread 2-3 times per week). Nowadays, I have altered the bread recipe a bit and I still make it 2-3 times a week - it's a staple around our house. This recipe is very forgiving - I have used all-purpose flour, bread flour, white wheat flour, and stone ground white wheat flour (the latter being our favorite). I have also replaced the sugar with 1/2 cup honey and I use butter instead of oil. Oh, and I also replace 1 tablespoon of the flour with 1 tablespoon of potato flour - makes for a very soft bread. I make the dough in the bread maker and bake it in the oven. The only complaint around here is the size of the slices - much too big for sandwich bags for lunches!

Whole Egg Mayonnaise
The recipe is a good starting point from which to make your own mayonnaise. I've tried several different recipes - all of which call for a slow drizzle of the oil. Every time I follow a recipe, it NEVER turns out.... always ends up soupy. For me, I use my immersion blender. I put the egg in first, then add all of the oil. Submerge the blender to the bottom and while keeping it firmly on the bottom, I give a couple of 1/2 to 1 second bursts. As soon as it looks creamy, I start to slowly incorporate the rest of the oil. Once all of the oil has been fully incorporated, I add the other ingredients. I also add a little onion powder and paprika. The thing that I loved about *this* recipe is the whole egg concept.

Best Brownies
I made these exactly as the recipe states and they came out of the oven looking lifeless and dull. The taste is okay, mediocre at best. Not sure what went wrong since it has such rave reviews. I did give it two stars as a benefit of the doubt - I may have mixed it too much putting too much air in the batter. Either way, it's highly unlikely that I will ever make these again. I should have known better.
