Fast and Easy Spinach with Shallots

Didn't have shallots so I finely diced sweet onion instead. Also used butter instead of EVOO just because I wanted that taste. Added some minced garlic as well but not too much to overpower the spinach. Super fast and easy. It was only two generous servings but darn good ones. A+.

Fruit Dip II

I've been using this recipe for years (got it from a friend originally) and it's the easiest crowd pleaser ever!! As long and the cream cheese is room temp., you can mix by hand rather than using a blender.

I've made this recipe 3 times. Two out of 3 times the results were outstanding, but once it turned out way too heavy... I haven't figured out yet what might have happened. The only tweak I make to this recipe is that I use a little less oil and I add about a third of a cup of raisins.

Double Chocolate Mocha Trifle

Originally got this recipe (years ago) from my Pampered Chef Consultant and she told me this is where she got the recipe (introducing me to the site). This is a huge family and work favorite. You can easily make the brownies one night then put the trifle together the following day. YUMMY! You can also buy the heath candy bar crumbles in the baking section at the grocery store (to save a little effort), but I do find that these pieces don't seem as chocolatey. Many thanks for a great recipe!!

Guinness® Corned Beef

I've never made corned beef before I made this recipe. Now I'll never have to try another recipe. I thought the sugar would make it too sweet but I found that the guinness balanced it out nicely. I made this recipe with "Diane's Colcannon" for Saint Patty's Day and it was a hit.

Excellent recipe.... I used center cut bacon (for less fat) and I added garlic powder (to taste) at the same time I added salt to the potatoes (gave it a little more depth). YUM YUM!!! Also, this recipe doubled nicely. I accompanied this recipe with the "Guinness(R) Corned Beef" recipe on this site and the meal was spectacular!
