Crab 'N Shrimp Dip

I am living near the Gulf of Mexico. We buy live crabs and boil them in Crab Boil. Crab Boil is all spices which enhance the flavor of the ordinarily bland tasting crab meat. Also, in the boil we add onions and lemons along with small red potatoes and corn on the cob. These veggies also absorb the flavors of the crab boil. The shrimp are done in similar fashion, but boil a lot shorter time. The result is the same. So, whenever I find a recipe that calls for canned seafood, I substitute the home made variety and it turns out well. So folks, use some spices in the recipe and maybe the canned variety will take on a new flavor, as some of you have done.

Very Old Meatloaf Recipe

The secret is the added moisture. Also the breadcrumbs will soften the mixture. There are a lot of meat loaf recipes out there, so try them all and see which one is the best for your tastes. Generally I use beef pork and veal for meatloaf in equal amounts. It suits me.

Shrimp Scampi Bake

We have fresh shrimp available all year, thus, this is a fairly familiar recipe. We do however completaly devain the shrimp (two veins in shrimp), and use clarified butter to taste as well as a little tabasco for additional flavor. This recipe lends itself to many variations according to ones tastes.

Brazilian Black Bean Stew

The note I added for my info was that I went lighter on the meat portion. Low fat is better. Also, I added a diced eggplant for more moisture and fiber.

Slow Cooker Hoppin' John Chowder

I agree, if you are using canned beans, no need for slow cooker, especially for six hours. Whenever we use the slow cooker, we always start with dried beans and add the ingredients we like.

Elegant Oyster Soup

We used the oyster liquor in lieu of the chicken broth, and shallots in lieu of the onions. The carrots we omitted. More spices were added, otherwise it was good.
