Cheddar Broccoli Salad

Reviewed: Jun. 29, 2010
I love this broccoli salad. I have made it multiple times and it is always a hit. I use the olive oil mayo instead of the regular and it tastes great. I tried it with Splenda, but did not like it as much, so I switched back to the sugar that the recipe called for.

Chicken Cordon Bleu II

Reviewed: May 29, 2010
Very good flavor!! Mine did not come out nearly as pretty as the picture - I don't think I pounded the chicken breast halves enough and my ham and cheese ended up leaking out. But, they tasted fantastic. I will definitely make again, but try flattening the chicken breast more and maybe use string instead of toothpicks. I also followed the advice of others and used 3 TBS of butter and 3 TBS of olive oil.

Whole Wheat Beer Bread

Reviewed: Mar. 10, 2010
I actually wanted to give this 4.5 stars, but didn't have that option. I prepared this recipe exactly as written. It made very tasty bread and was super, super easy to make. I highly recommend making this bread if you are in a hurry! My husband liked it enough to request it again, and the beer does make a difference. The first time I used a New Castle Honey Brown, and the second time I used a Yuengling. I actually liked it with the Yuengling better.

What a great recipe! This was the first time I made bread and I can't believe how much better it tastes than store bought. I followed the recipe exactly and was very pleased at how well it turned out. I will be making this one again and again. Thanks!!

German Chocolate Cake Frosting II

Reviewed: Sep. 28, 2009
I made this frosting for a Duncan Hines German Chocolate boxed cake mix instead of a homemade cake in order to save time and it was very good. The frosting helped make the cake look like it was from scratch. I did not have margarine, so I used butter instead and did need to add corn starch to thicken it up a little. I had left over frosting, so I put it in a container to use later. The ABSOLUTE BEST way to eat this cake/frosting is to cut a thick slice, add additional frosting mix and microwave for about 30 seconds!!! I would have rated this frosting/cake combo 4 stars, but after tasting the warmed frosting and cake I'd give it 6 stars if I could!!

Italian Vegetable Soup

Reviewed: Oct. 20, 2008
This soup was perfect for our first cool autumn day! I tried to follow the recipe exactly, except that instead of ground beef I used beef stew meat because it was on sale at the grocery. I didn't separate the macaroni out as other reviewers had suggested, and it did become mushy, but it still tasted great. (Next time I will separate.) I served this with sourdough bread and it was delicious. I'll make this one again. Thanks for the recipe!

Barbeque Chicken

Reviewed: Jul. 1, 2008
We really liked this recipe. The chicken was very flavorful and moist. I was a little weary when trying this recipe out because it only had 4 stars. (I try to stick with the proven 5 recipes) But, I have to say that based on the taste and the absolute ease of the recipe it deserves a 5! I picked it because I had most of the ingredients in my kitchen. I substituted olive oil for the vegetable oil. I didn't have lemon juice, so I squeezed 1 and 1/2 lemons in a measuring cup and added enough water to make the full cup that is required. I let it marinate for about two hours. The results were amazing. This is a very easy, no mess chicken recipe. I served it with corn on the cob (done in the microwave) and coleslaw (The coleslaw was made from the bag, just add mayo, sugar, and vinegar) so the whole meal was easy to prepare. A great summer recipe that I will use again. Thanks!!

Bacon-Wrapped Scallops

Reviewed: Jan. 20, 2008
I made 1/2 of these exactly like the recipe, the other 1/2 I added a dab of cream cheese. They were very quick and easy to make, and I liked the added cream cheese. Someone suggested that a dab of horseradish sauce would give them an extra zing, so I might try that next time. I will also precook the bacon half way,and then wrap it around the scallops. The bacon was not crisp enough for most of us, although the scallops were perfect. Overall, a good recipe. Thanks.

Lower Fat Banana Bread I

Reviewed: Jan. 5, 2008
I had some bananas that were too mushy to eat so I looked for a recipe I could use them in instead of throwing them out. I also needed a recipe that had basic ingredients that I had on hand because I didn't want to make a trip to the store. This recipe was perfect, quick, easy and tasty. I added about double the bananas that the recipe called for, because that was what I had left. I also added a cup of chocolate chips and sprinkled walnuts on top. I made muffins and baked them at 350 for 25 minutes. They were very moist and tasted great.

Old Fashioned Paradise Pumpkin Pie

Reviewed: Nov. 22, 2007
I loved this pie and will make again! I followed earlier suggestions and made a double batch of the topping and added the 2 tablespoons of flour to the pumpkin mix. I also added a teaspoon of pumpkin spice, just because I like the extra flavor. It came out well and everyone who tried it liked it and asked for the recipe.

Sandy's Chocolate Cake

Reviewed: Nov. 10, 2007
I made this for my husband's birthday, he loves chocolate and this was perfect. I thought it was very rich and I loved the frosting. I had read the reviews and was suprised at how very chocolate this tasted - some reviewers felt it didn't have enough chocolate taste, but I disagree. In fact it was a little too much chocolate for me, I'm not a big chocolate fan. But, since it was my husband's birthday and he LOVES chocolate it was perfect. I will make this one again, everyone liked it. I followed the directions exactly and the only change I would make is on how I managed the frosting. I would put more frosting in the middle layers of the cake, I wasn't sure if I'd have enough for the top of the cake, so I skimped a little on the middle. I ended up having leftover frosting. Thanks for this great recipe!

Broiled Tilapia Parmesan

Reviewed: Oct. 24, 2007
I have to agree with everyone else who raved about this recipe, this was great. I cut the recipe in 1/2 because I had only bought a pound of the tilapia and before putting the fillets into broil I added a dash of Old Bay and some fresh squeezed lemon juice and a tiny bit of olive oil. They were moist and tasty. Thanks for this quick and easy recipe that I know I will use again and again. My husband already asked if we can use the parmesan topping with some of our other favorite fish.

Russian Tea Cakes I

Reviewed: Feb. 2, 2006
I was a little worried about how these were going to turn out, I thought they might be too dry. But, I followed the recipe exactly and I was thrilled with the results. The cookies actually tasted better the next day. My 80 year old aunt said they tasted just like the Italian Wedding Cookies she used to eat. Thanks for the great recipe!
