Cream Cheese Penguins

Reviewed: Feb. 13, 2006
Super cute idea! I made these superbowl Sunday for me, my hubby and my boys...16 & 17 & even they thought these were cool! I think I stuffed too much cream cheese into the belly so next time I will use a tad less.Seemed to be overbearing but my bad.I didnt have tooth picks so i used shredded carrots that I had on hand. My hubbys mom came over while I was making them and she was tickled by them. She had to take one with here to show her Aunt who was just talking about that "penguin movie"!

Warm Apple Pocket

Reviewed: Feb. 14, 2006
Loved it! Loved it! Loved it! I really didn't get a slice but the boys did and they said it was great! I called it hybrid because I used part or Melissas Fried apple Pie recipe too by using 4 apples and simmered them with spices and some water to help along. Used cornstarch to help thicken some. Is a keeper for sure.

Did just what the recipe said to do and they were a smashing hit! Topped with strawberry filling. Will make these for as many occasions and "Just Because" days as I can. :}

Cream Cheese Cut-Outs I

Reviewed: Feb. 16, 2006
Made these for Valentines Day and was not too impressed with them. They tasted more like a bisquit than a pasty and were a bit dry. I chilled the dough and it was easy to work with. Not sure why they didn't taste like a pastry but I just might make them again but try somethings different.

Easy Chocolate Tofu Pie

Reviewed: Feb. 16, 2006
HE HE !! Fooled my guys with this. I have only worked with tofu 1 time before and that was oohh about 9 years ago and that was enough to scare us all away....until now! I was very leary to try it but it worked. Very nice pie for sure. Nobody knows my little secret about this pie and they never will. :) I wrote the measurements down then tore it up when I was done to ensure they would not see it! I had some Silken on hand and glad I did...very smooth. The only things I did different was I used half splenda and half sugar and added almond extract along with the vanilla. Nice but I think I used too much. Will tone it down next time and maybe make a double batch so as to filll the shell more. Will make again! Thank you for this.

Basic Corn Muffins

Reviewed: Feb. 17, 2006
My hubby loves cornbread and this was awsome. I added corn and also I used applesauce instead of oil. I did, however make a snafu by not looking at the recipe correctly and added 1 cup of applesauce instead of 1/4 cup. I thought they were ruined but they turned out great. Couldn't taste the applesauce. They did not last. Will definatly make again....Easy to make and versitile!! Thank you for this.

Tandy Cake

Reviewed: Feb. 22, 2006
Very Nice. I only used one pack(6 bars of chocolate) Will use more next time. I broke the candy bars into pieces....should have left whole. I added the peanut butter and the chocolate to the cake while it was still hot as suggested by others and worked fine. I might make the cake so it is not so tall next time (personal preference). The cake was very similar to a hot milk cake. It didn't last long at all! Over all great taste.

Alligator Pears and Apples

Reviewed: Feb. 22, 2006
Really liked this. I added a mango to the mix. Never had an avocado and was a litte aprehensive about it but this was nice. I think the avocado was too ripe...very mushy. That is why I did not add a photo! :) Too ugly. Hubby didn't really like the avocado by itself but liked the salad.

Hawaiian Banana Bars

Reviewed: Feb. 23, 2006
Very Nice. I added some shredded coconut and instead of cutting while it was hot and rolling in sugar and cinnomon I sifted the mixture on top while it was hot and let it cool befoe cutting. It is very moist but did seem to be more like a cake than a bar. Still super good.

Hush Puppies II

Reviewed: Feb. 24, 2006
Awsome hushpuppies. I added some cornmeal to the mix so it would have the texture I remember them having. I added a smidge of old bay, salt & pepper. You could season these anyway you desire. Thanx for the keeper!

Grandpa's Special Stuffing

Reviewed: Feb. 27, 2006
This recipe is awesome! I've made it 2 times in the past week. I left out the prosiutto and only used 6 eggs...The first time I made it I used 4 eggs. This reminds me of a stromboli. I gave it 4 stars because of its texture....Not so fluffy but I will experiment with it and see if I can get it to be more fluffy. Will be something I make a lot of regardless.

Chocolate Eclair Dessert

Reviewed: Feb. 28, 2006
Great Dessert. I used 2 larger boxes and less milk only because I didn't pay attention to what size boxes I had! It still turned out awesome. Instead of using frosting I mixed some homemade chocolate syrup and melted chocolate chips and spread on the top. I layered vanilla wafer cookies on the bottom with the graham crackers. I think next time I will use only the vanilla wafers and see what I get. Will make again and again. Thanx for the post!!
