Mayonnaise Biscuits

This recipe is dangerous!! OMG everyone in my house loves these and they are so easy to make we eat them all the time. Two tips: 1. Use a self scraping scooper to form the biscuits and plop them out onto the baking surface. 2. Bake them on a baking stone. They come out perfect every time!

Artichoke Chicken

So easy! Nice flavor! Kids gobbled it up! I took the suggestion of broiling for a few minutes at the end of the cooking time to brown the top and that worked out great. A keeper!

Roast Sticky Chicken-Rotisserie Style

I tried this recipe with a family size package of chicken thighs instead of two whole chickens. I washed and removed the skins (interested in lowering the fat) and rubbed the spice mixture all over both sides. Placed the pieces in a glass bowl and put in a chopped medium onion and covered in plastic wrap and placed in the refrigerator overnight. When I arranged the pieces in the baking pan I put a little olive oil on each piece (concerned about the pieces drying without the skin) and baked. It was wonderful! I served with cous cous.

Pumpkin Crumb Cake

This is a HUGE hit with my family and at parties! My children ask me to make this often. My husband actually came downstairs from his office one day...pulled out the yellow cake mix and the can of pumpkin set them on the counter and walked back upstairs...that was his way of subtley asking for me to make pumpkin crumb cake!
