I tried this recipe with a family size package of chicken thighs instead of two whole chickens. I washed and removed the skins (interested in lowering the fat) and rubbed the spice mixture all over both sides. Placed the pieces in a glass bowl and put in a chopped medium onion and covered in plastic wrap and placed in the refrigerator overnight. When I arranged the pieces in the baking pan I put a little olive oil on each piece (concerned about the pieces drying without the skin) and baked. It was wonderful! I served with cous cous.
