Joey's Peanut Butter Cookies

Excellent peanut butter cookies! I made them for my Dad for Father's Day and he loved them. Perfect texture... even my husband, who doesn't ordinarily like peanut butter cookies, couldn't stop eating them!

Amazing Sun-Dried Tomato Cream Sauce

Brown Sugar Meatloaf

This is the BEST meatloaf I've ever made! My husband couldn't get enough and couldn't wait to eat more for lunch the next day. He confirmed it's the best meatloaf he's ever had. The brown sugar and ketchup combine to make a really tasty glaze and seems to flavor the meat well. You need to bake this in a LOAF PAN. Do not try to make it on a cookie sheet or jelly roll pan. When it comes time to take it out of the loaf pan, place the serving plate, inverted, on top of the loaf pan and then hold the two tightly together as you flip it. Be prepared to spill some juices in the process but it's not as messy as some have made it sound. The key is to flip quickly. I used less brown sugar (about half the amount called for), only 1 egg and only 1/2 cup of milk. I added about 1/4 cup of BBQ sauce to the hamburger meat. My husband said he DEFINITELY wants this to become a regular!

Passover Chocolate Torte

This is a truly delicious cake, Passover or not! I am as intense a chocoholic as they come and this cake has now become my favorite, bar none. I made it last night and I got scared towards the end of the baking time because the top looked dried out, so I took it out about 7 minutes shy of what the recipe called for. Otherwise, I followed the recipe to the letter. It turns out I should have trusted the recipe, because the center was more than gooey, it was undercooked. However... that is not the end of the story. My husband and I both had a piece while it was still warm, we couldn't resist after smelling it baking! As described above, the center was hot and very gooey, too gooey, actually, but towards the outer edge it became incredible... dense and moist and chocolatey.... perfect, in fact. I put it in the refrigerator overnight and today it is FABULOUS... even the undercooked inside is now more like the inside of a truffle, and then it gets cakier towards the outside. I am baking another one tonight and will follow the recommended baking time religiously... otherwise, I won't change a thing. I used my coffee grinder to grind the sliced almonds my husband brought home from the store, so, if you're wondering how to grind your almonds, that worked perfectly for me. Turned the almonds into a fine-textured meal, almost like flour. I HIGHLY recommend this recipe to anyone looking for a rich, decadent and VERY chocolatey dessert. It will not disappoint.

Irish Soda Bread I

This was SO simple to make and delicious. I added a handful or two of chopped walnuts instead of the raisins and loved it. Tastes very similar to scones, but moister. It's perfect for breakfast with butter or cream cheese and makes a nice snack, too. I warm it in the toaster... YUM!

Balsamic-Glazed Salmon Fillets

I made this tonight for the first time and it was very good. I substituted fresh rosemary for the oregano. I also used less balsamic vinegar than 1/3 cup, maybe 1/4 cup instead, because that was all I had! I compensated by adding some red wine vinegar. I kept my salmon fillet whole, so it took longer to cook (about 18 minutes) but it was worth the wait! Very flavorful, moist and delicious.
