Quinoa with Chickpeas and Tomatoes

This recipe is incredible!! The cumin gives the quinoa a wonderful flavor. I used grape tomatoes (an entire package) instead of 1 big tomato. It is EVEN better the next day after it has been refrigerated. I cut up a Babybel Light cheese on top of it and it was the perfect lunch the next day. Five stars and thanks for this keeper!

Warm Artichoke Dip

This dip was amazingly easy and quick to make and went first at the cocktail party that I brought it to! Everyone asked for the recipe!

Egg Salad Sandwiches

This sandwich was delicious. I made it on white bread, but a wheat bread would have been great as well. Next time I may try toasting the bread, which I think would also be good. The egg salad is one of the best I ever had, the perfect flavor of egg and spices - neither is too overwhelming.
