Extreme Chocolate Cake

Simply fabulous. I bake a LOT. I am replacing my old chocolate cake recipe with this one. Moist, easy delicious. This is very rich and sweet, so a little bit goes a long way. If you are having a hard time slicing the layers for frosting try putting it in the fridge for a little bit. It will keep it from breaking as you cut and lift the layers to stack. I made it exactly as is and wouldn't change a thing.

Tofu Stroganoff

I made it exactly as written here and it was delicious! This one is going into our regular rotation. The only thing I noticed was that we didn't need to cook the whole bag of egg noodles, we had a bunch leftover. Next time I will probably only make 2/3 of the bag.

Sticky Toffee Pudding Cake

Thank you! This recipe was great. We just made it last night for a "British" food theme night for the olympics and it was a bit hit. We made it exactly as written. I did make my own self rising flour by adding baking soda and salt to regular flour based on an article I found online (since I didn't have any self rising flour on hand). It was delicious warm with vanilla ice cream on top.

Good Old Fashioned Pancakes

Garlic Brussels Sprouts

I am not a huge fan of brussels sprouts, but my husband loves them, so I made this- and even I liked them! We used a little less butter and it was still good! We will make it many more times for sure.

Hearty Vegetable Lasagna

Sweet Potato Minestrone

So delicious, and even better as leftovers. We made it exactly as is and loved it. It's a wonderful fall soup. Super easy to make once you chop up all the vegetables.

Kelly's Butterscotch Pudding

Yum! We really liked this pudding and it was pretty easy to make. I would like to try it next time with dark brown sugar as some others mentioned because I used light. It only has a mild butterscotch flavor, but we still enjoyed it and will make it again.

Traditional Style Vegan Shepherd's Pie

Yum! We loved it. Next time I would leave the salt out of the potatoes though, it wasn't necessary and made it pretty salty. I am sure it would be just as delicious without it, or with a lot less.

Belgian Waffles

My husband said he will never eat a "regular" Belgian waffle again, he only wants these! The only problem I had was that the dough rose immediately when it all got mixed together, but it never doubled in size and we waited a long time- so I went ahead and just cooked them and they tasted great regardless.

Slow Cooker Tapioca Pudding

Best tapioca I have ever made! I am so excited, it is smooth, creamy and delicious. BUT you need to pay attention to your slow cooker since apparently they are all a little different. On my first attempt I did 6 hours on low and it was overcooked, clumpy and tasted eggy (but still kind of good). This time I stirred it every half hour and kept a close eye on it after 3 hours and mine was done in 4 1/2 hours- perfection!

Swiss Chard with Pinto Beans and Goat Cheese

This is now a staple in our house during swiss chard season. We sometimes use black beans and it's just as good, and we always serve it over quinoa. Healthy and delicious! Thank you for the great addition to our recipe box.

Chicken Pot Pie III

This recipe is so easy and delicious. I have made it four times already and now I dump in the whole can of celery soup and it is just as good an then it doesn't go to waste. Everyone loves it!

Um...delicious! I chose this because I thought zucchini would be healthy, but with all this cheese probably not, haha. But it was worth it- so tasty! Served with a little marinara for dipping.

Bacon-y Bok Choy

My husband gives this 5 stars and I give it three...so we compromised on 4. It was way too spicy for me, but that was what he loved about it. We served it over plain quinoa which was good and while I enjoyed the flavor of the dish, my mouth and throat were on fire! ...my husband gulped it down. Make sure you have milk on hand.

Lentil and Green Collard Soup

We liked this soup, but it was sooo salty. I would make it again and cut way down on the salt. I am going to try watering the leftovers down to reduce some saltiness- maybe only use half. I put in less lemon based on some of the other reviews but I was squeezing it in my bowl as I seemed to think it needed it.

Quinoa Veggie Salad with Zesty Vinaigrette

Yum! I never thought to use quinoa in this way (like a pasta salad). It was very good- just be aware that this recipe makes a TON! We only had 2 1/2 cups quinoa, so we used that with the regularly listed amount of veggies and dressing and it still made so much we barely had a bowl big enough to fit it in. But we ate it for lunch all week it was very tasty. This would be a perfect healthy side for a summer BBQ.
