Zucchini Herb Casserole

Wow was this a nice casserole! Recipe "as is" is probably just a 3 or 4 but I took other reviewers advice and added a ton more seasoning (hot sauce, about triple the crushed garlic, and extra basil). I also added more rice as was suggested. Very delicious, I would make it again!

Asparagus Cashew Rice Pilaf

I was slightly worried going into this recipe because, to be honest, the ingredients list looked a bit simple. In the end though, my husband and I both agreed that it was a surprisingly delicious recipe. The only think I changed was using olive oil instead of butter and adding onion powder because I was out of onions. I would definitely make this again!

Easy Batter Fruit Cobbler

I also was initially skeptical of the recipe because it just looked way too easy. Some things are not too good to be true. Being a vegan I also used soy milk and margarine and enjoyed the results thoroughly. I made mine with frozen strawberries and canned peaches to use up some extra fruits that had been around for a while. Very delicious recipe AS IS. Well done :)

Bikini Martini

This was so delicious, it tasted like a strawberry pina colada! I usually enjoy strong martinis but even I found this one a bit too strong for the flavours. I echo others' recommendation to double the amount of pineapple... at least! Very delicious!

Cajun Chicken Pasta

Gave it 4 out of5 only because I had to add more Cajun seasoning because I love lots of flavour, but otherwise this recipe is amazing! I also made a white sauce with soy milk instead of adding half and half to reduce fat and to make it vegan! (used fake chicken too!) Very tasty, a new favourite!

Fluffy Pancakes

I make these every Saturday morning for my man and he loves them! I'm a vegan, so I use vegan margarin, soy milk and egg replacer... they come out fluffy and tasting wonderful! The perfect amount for two people!

Quick and Easy Alfredo Sauce

I only had some spreadable spinach and feta cream cheese on hand, so I took a gamble and tried it out. This turned out so well and in the words of my husband is "one of the best things I've ever made!"

Penne Pasta with Spinach and Bacon

This dish was fantastic, but I did have to make some changes. To cut down the fat I drained the bacon, but if you're not concerned with fat then don't because it tastes better with it. I also added salt, pepper and basil and oregano and then stirred in some parmesean cheese, just to give more flavour...yum. Lastly, you will want to drain the diced tomatoes slightly, unless you like watery pasta. totally agree with others that this keeps VERY well overnight, in fact it tasts WAY better the second day! Also was VERY quick!!!

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

This recipe was delicious! The only thing I did differently was after removing the pork from the pan, instead of adding more oil, I added some white wine which gave the whole dish an even more sophisticated taste, and reduced the fat content. I also left out the feta to keep down the fat. Wonderful dish!
