Cottage Cheese Pancakes

These are wonderful - my mom used to make these when I was a kid. I use 1/4 cup whole wheat flour instead of the 1/3 cup AP flour and melted, cooled butter in place of the vegetable oil. (They are good with the original ingredients but I avoid both these days.) I also prefer all fruit or jam instead of the syrup, or really, just plain.

Buttermilk Oatmeal Muffins

These are wonderful!! The only change I made was to use old fashioned oats instead of the quick cook, so I pulsed them in the food processor several times to get them down to quick cook size and they worked beautifully. Let cool for another 5-10 minutes out of the pan so the wrapper didn't stick to the muffin. Oh, and not sure what we did, but we ended up making 10 muffins and cooking for 15 minutes. I'm looking forward to playing around with add ins - we have some beautiful fresh blueberries that would be lovely in these.

Slow Cooker Turkey Breast

This is quite good and wonderfully quick to throw in the crockpot. I had to keep a close eye on it and removed it when the pop up button "popped" - was glad I did because it would have been dry otherwise. Flavor was quite good! UPDATE I had to upgrade my rating - this is now one of our favorites! I make it a couple of times a month, either with a turkey breast or a whole chicken, and it is SO GOOD! I prefer (still) to use a bird with a button so that we can remove it and not overcook. Leftovers are perfect for soup.

Asian Lettuce Wraps

Delicious. Made as directed, with two changes: put the water chestnuts out separately for those in the house that don't like them, and omitted the green onions. This is a definite remake! We plan to try it with turkey and/or TVP (as per another reviewer) as well.

Cheese Biscuits I

Delicious! I used sharp cheddar and fresh grated romano cheese instead of the parmesan, 1/2 cup, I assumed the recipe meant 1/4 cup of a canister of parmesan.

Strawberry Pie V

Excellent. Only change I made was to cut back on the sugar by half a cup. Works well with other kinds of fruit (raspberries, peaches) and jell-o, too. This is a definite favorite around here!

Sloppy Joe Sandwiches

Very good. Quadrupled (family of 7) the recipe. Only change I will make in the future is to add some bbq sauce instead of the brown sugar, it was a bit sweet for us.

Banana Split Bread

Even better the second day. I do have to confess to using milk chocolate chips (prefer them) and we added 1/2 cup chopped maraschino cherries (to make it more "banana split" like). I actually wasn't too enamored with it the first day but this morning the flavors were fabulous! Will make again.

Best Black Beans

Delicious. I am going to add cumin next time (cause we love the stuff) but honestly this recipe needs no tweaking at all! (Okay, okay, I minced the onion and garlic instead of chopping it, but that's a personal textural preference.) Great stuff - a staple for our taco nights, for sure!

Oh my. This northern gal has always been terrified of making biscuits ... no more. I cheated the first time and skipped the rolling/cutting and just did drop biscuits - they are SO GOOD! Especially with fresh butter and honey. Mmmm definitely going in the make again pile!!!

Onion Rice

This will be going into our regular meal rotation! I used a yellow onion (all I had - I rarely buy red) and sauteed it in half butter, half olive oil, and cut back on the pepper, to 1/4-1/2 tsp (I just grind it in). Delicious! It's a very flexible recipe provided you stay within the 1:2 rice:water ratio. We also like to add a bit of minced garlic just before adding the broth. Editing to add sometimes it takes a little longer than 20 minutes (I find it takes 25-30). Using equal portions of onion and rice (ie. 1 cup of raw onion, 1 cup of uncooked rice) seems to offer the perfect ratio (for us). Also very good if you let the onions turn translucent prior to adding the rice so they brown a bit while you "toast" the rice.

Delicious. Can't taste the kale flavor at all! Only change I made was to freeze the kale, too. Have also made it with coconut milk instead of milk and it's yummy that way, too.

One Bowl Brownies

These were yummy and came out perfect! I did change a couple of things (always do) - used 3/4 cup cocoa and 1/4 canola oil whisked until smooth (no baking chocolate) and added 1/2 tsp almond extract but otherwise followed the directions. We will definitely be making these again. They are insanely sticky, though; I will definitely try the foil trick next time.

Double Flavor Fudge

Delicious. Only change is I made it on the stove over a very low flame, removing from the heat just before the chips finished melting (they finish while you stir it). I also used a splash of almond extract instead of the vanilla. HUGE hit in our house.

Pasta Deli Salad

Proportions are just right! We skipped the onions (don't like them raw, IMO they get overwhelming in dishes like this) and used celery instead of the green pepper. Also good with Ken's Greek dressing instead of Italian with a handful or two of chopped black olives tossed in. This is going into our regular summer rotation! Thanks!

Cinnamon Ice Cream

Heavenly! We make this to go with our yearly apple picking & pie making (highly recommend Granny Ople's pie filling with the earthquake crust from this site!) and it is divine. Definitely a rare treat due to the calories but we look forward to it every fall.

Broiled Tilapia Parmesan

Perfect. We all really enjoyed this. With the exception of adding 1/8 tsp garlic powder, I followed the recipe exactly, even the cooking times worked just right. Will definitely be making this again. Used the pre-frozen fillets in a bag at Save-A-Lot (instead of purchasing from the fish counter at the store where they would cost twice as much) and they worked beautifully in this.
