Buttery Cooked Carrots

Delicious following the adaptations made by other reviewers - four stars as written. Used real butter and removed all the water. Added salt and pepper to serve. It's a wonderful, simple recipe.

Parmesan Chicken

This is a fantastic recipe. Followed exactly as written with one change - I filleted the chicken instead of pounding it out. This is divine in chicken parmesan. Can't wait to make it again!

Triple-Cheese Macaroni

Very good. I used whole wheat macaroni (1 13.25 oz box), 2% milk cheddar, egg substitute, and fat free evaporated milk. The only "full" fat ingredients I used were the velveeta and the butter. Good consistency and texture.

Spicy Party Pretzels

We were kind of underwhelmed by these (dh and I were). Two of the four kids really enjoyed them, the other two could take or leave them. I would make them again for the two kids who liked them because they really loved them (why I didn't do three stars instead of the four).

Macaroni and Cheese V

This was okay. The only thing I changed was to use whole wheat macaroni instead of the regular. It's a good base recipe. I would probably use less crumbs another time and more cheese. Edited 10/2 to upgrade to 4 stars because this is (to my surprise) now a favorite of my two elder boys (11 and 7). I've made it again using half the crumbs (which I actually halve again and use parmesan as half) and an extra cup of cheese.

Slow Cooker Roast Beef

Made this past weekend. I do not use the soy sauce (too salty), I use either water with the onion soup mix or a can of cream of mushroom soup and a sliced onion (instead of both the soy and onion soup mix). If you have an electric roaster, try putting the roast in that for 20-24 hours at 200-225. I find it overcooks in my slow cooker thanks to how hot they cook these days.

Good Old Fashioned Pancakes

These are very good - made following the recipe exactly. Changes I will make next time - either unsalted butter or omit the salt, and I will let the wet ingredients come to room temp before combining. Our pancakes were a little flat (not fluffy) - the flavor was marvelous and they were very tender, but we'd like them fluffier - my assumption is that's the fault of the cook, though, not the recipe! Will definitely make again.

Very good. Tried once as written; since then we've cut back the butter (by half) and sugar (to one cup) - it was too - oily I guess - for our tastes with the full cup of butter. Must be my northern upbringing, lol.

This is fantastic!! I love the basic recipe here as is - we tend to double the onion & garlic (I always added that to store bought mixes anyway) but it is perfect - I don't need to look any further! This is our recipe.

Onion Rice

This will be going into our regular meal rotation! I used a yellow onion (all I had - I rarely buy red) and sauteed it in half butter, half olive oil, and cut back on the pepper, to 1/4-1/2 tsp (I just grind it in). Delicious! It's a very flexible recipe provided you stay within the 1:2 rice:water ratio. We also like to add a bit of minced garlic just before adding the broth. Editing to add sometimes it takes a little longer than 20 minutes (I find it takes 25-30). Using equal portions of onion and rice (ie. 1 cup of raw onion, 1 cup of uncooked rice) seems to offer the perfect ratio (for us). Also very good if you let the onions turn translucent prior to adding the rice so they brown a bit while you "toast" the rice.

Bacon Cheddar Deviled Eggs

What a treat to find this recipe on here!! I've been making my deviled eggs like this for years and am amazed that more people don't do so because it is SO GOOD! I use good quality extra sharp cheddar because I love the taste it gives. It's also fun to add either a little juice from the dill pickle jar or even just a bit of dill pickle relish. Mmmmm.

Onion Meat Loaf

Just like my mom's recipe, just exchange 1 cup leftover (stale) crushed croutons (any kind) for the 3/4 cup oatmeal. I've been looking for something that had the right proportions for years and this is it! Thanks!

Dh loves this so I make it for him. Too much heat for the rest of us (we aren't big "spicy" people). Freezes well in individual portions for dh to take to work for lunches.

Divine. Only had regular chocolate chips but they worked just fine. Topped with a simple butter & powdered sugar glaze. Reminds me of the crockpot triple chocolate mess.

Chocolate Eclair Dessert

I like to use either french vanilla or white chocolate pudding mix in mine, and I prefer to use nutella - the frosting is just too sweet for me. (Of course the nutella isn't LOL) Fantastic recipe for something that is so easy and quick to whip up!

Creamed Chipped Beef On Toast

Just like my mom taught me to make it. I just rinse the dried beef under hot water (my mom always did it a few times, she had to watch salt intake) to remove a little of the salt. I like it over leftover mashed potatoes or biscuits - noodles are good too.

Brown Sugar Meatloaf

Made this twice, first time as written. Didn't like the texture of the crumbs (that's a personal family texture issue for us), so we used whole wheat bread crumbs the second time around (or 3 slices). Also decreased milk by a couple of tbsp and used onion soup mix in place of the onion & salt. Put sauce on top and decreased sugar by half - it was too sweet for us.
