Buttermilk Oatmeal Muffins

These are wonderful!! The only change I made was to use old fashioned oats instead of the quick cook, so I pulsed them in the food processor several times to get them down to quick cook size and they worked beautifully. Let cool for another 5-10 minutes out of the pan so the wrapper didn't stick to the muffin. Oh, and not sure what we did, but we ended up making 10 muffins and cooking for 15 minutes. I'm looking forward to playing around with add ins - we have some beautiful fresh blueberries that would be lovely in these.

Grilled Chicken Thighs Tandoori

Boston Baked Beans

Excellent. Followed as written with two exceptions: used turkey bacon slices instead of regular bacon, and did the fifth step in my crockpot for 7-8 hours (a hot cooking one). Worked like a charm ... delicious beans.

Double Flavor Fudge

Delicious. Only change is I made it on the stove over a very low flame, removing from the heat just before the chips finished melting (they finish while you stir it). I also used a splash of almond extract instead of the vanilla. HUGE hit in our house.

Buffalo Chicken Wraps

This is a huge hit in our house! You can also broil the chicken (I fillet and then slice into strips after it's cooked) then toss it in the sauce (and we like wing sauce instead of the hot sauce). Good on whole wheat tortillas too. The celery in the wrap make it.

Pasta Deli Salad

Proportions are just right! We skipped the onions (don't like them raw, IMO they get overwhelming in dishes like this) and used celery instead of the green pepper. Also good with Ken's Greek dressing instead of Italian with a handful or two of chopped black olives tossed in. This is going into our regular summer rotation! Thanks!

Baked Whole Cauliflower

I was underwhelmed; however everyone else ate and enjoyed (or my "I hate cauliflower" folk tolerated, lol); I will certainly make again - it's a nice change on a typically unexciting veggie. I want to play around with it a bit. :)

Peaches 'N Cream Banana Breakfast Smoothie

Very good. Have made both as written (very good) but also skipping the ice, with half a frozen banana and 1/2 cup sliced chilled peaches (I like less banana). Very filling and very good flavor! Look forward to playing around with different flavors of the various ingredients - the proportions are great, I would just skip the ice - freeze the banana instead.

Basic Mashed Potatoes

Exactly how I make my potatoes ... only I don't use an electric mixer, since they come out gummy when I do. I hand mash the potatoes, then stir in the melted butter & milk. Perfect every time!

Banana Smoothie I

Perfect exactly as written. Will try freezing the banana next time (to thicken it up and make it colder). Have made it with soy milk as well and that works just fine. This is going into our regular breakfast rotation! UPDATE - have used a frozen banana the last few times and it is an even bigger hit - I finally have my teen eating breakfast without a fight thanks to this!! Make it almost every morning, often with 1 tbsp honey instead of the sugar. Pasteurized eggs or egg product can be used very easily in this.

School Day Biscuits

Delicious. The perfect quick treat! I used two 7.5 ounce packages (the ones that have 10 biscuits in them) because that was what I had on hand and had plenty of the butter and the sugar mixture to do all 20 biscuits. Used parchment paper to avoid the sticking issues - worked perfectly.

Easy Caramelized Onion Pork Chops

Loved the idea but the execution wasn't what we hoped for. Flavor seemed lacking and because of simmering the onions (rather than how I normally caramelize them) they seemed to have an odd texture. Definitely edible but probably won't make again.

Broiled Tilapia Parmesan

Perfect. We all really enjoyed this. With the exception of adding 1/8 tsp garlic powder, I followed the recipe exactly, even the cooking times worked just right. Will definitely be making this again. Used the pre-frozen fillets in a bag at Save-A-Lot (instead of purchasing from the fish counter at the store where they would cost twice as much) and they worked beautifully in this.

Peanut Butter Bars I

Yummy! As per other reviewers, I cut the margarine to 3/4 cup, and added 1/4 cup peanut butter, and the base held together well. I think another time I will use a better quality chocolate - I agree with other posters that the semi-sweet chips just don't do it justice. You want good quality ingredients in this!

Thanksgiving Leftover Casserole

Decent casserole. Kids all inhaled it, although we all said we tend to prefer the ingredients on their own. We usually love cheese and just couldn't seem to enjoy it in this one. I agree with the reviewers who said it needed more seasonings (I added a bunch and it would have been bland without). Also used twice the amount of meat called for.

Sweet Mustard Chicken Bake

Delicious! I used half honey and half brown sugar (didn't have enough honey) and half the butter. Will definitely be making this again - I'd like to try it with all honey. We didn't think it was too sweet as written.

Caramel Brownies II

These are wonderful!! The only change I made was to use milk chocolate chips instead of semi sweet (household preference - I didn't even have semi in the house). I think I would like to try making it with margarine another time instead of the butter, and maybe cut back on it a little (fingers were oily when eating a piece) but otherwise, I didn't adjust anything, including the cooking times. Just make sure to cool completely when it's done.

Jammin' Beef Stew

Very good. Followed the recipe with two changes: I didn't have the canned tomatoes, so I used 2 cups of leftover chunky spaghetti sauce that had onions and garlic in it that I needed to use up (this works amazingly well) and 2 tbsp of the jam instead of the full 1/4 cup (as per other reviews). It was really good and dh kept raving over how good it was. I didn't notice any grape jam flavor, it really does add something similar to wine (IMO). Made it in the crockpot and will do so again.
