BBQ Country Style Ribs

Reviewed: Jun. 8, 2014
Fantastic as written, have made this multiple times now. Can just sprinkle liberally with onion/garlic powder/lemon pepper if you don't have or don't want to use minced garlic or lemon. Other sauces work, too, we really liked steak sauce and teriyaki sauce (not together, LOL) instead of the barbecue. Easy to customize flavors!

Cream Cheese Frosting II

Reviewed: Mar. 4, 2013
Very good. However, used stevia, and significantly less than the equivalent of the 2 cups called for. If you are on a limited (or no) sugar diet, this works nicely with the stevia equivalent of 1/2 cup of sugar (I used 12 packets).

Green Slime Smoothie

Reviewed: Oct. 5, 2012
Very good - I used agave instead of honey (I'm out of honey). Only had frozen bananas, so added a bit of water to make it blend properly (a fair amount, about a cup). Skipped the ice altogether, it didn't need it.

Five Minute Ice Cream

Reviewed: Sep. 23, 2012
Fantastic - an incredibly intense strawberry flavor. Didn't have heavy cream so used half 2% greek yogurt and half 2% milk (would love to try the heavy cream though). Big hit with four of the five kids and dh said it was pretty good. Yum. I look forward to trying other combinations.

Buttercream Icing

Reviewed: Sep. 5, 2012
Great starting point. Very, very sweet as written, will cut back on confectioners' sugar in future batches by at least 1/2 cup, maybe a full cup. Definitely a make again!

Cottage Cheese Pancakes

Reviewed: Aug. 2, 2012
These are wonderful - my mom used to make these when I was a kid. I use 1/4 cup whole wheat flour instead of the 1/3 cup AP flour and melted, cooled butter in place of the vegetable oil. (They are good with the original ingredients but I avoid both these days.) I also prefer all fruit or jam instead of the syrup, or really, just plain.

Strawberry Pie V

Reviewed: Jul. 21, 2012
Excellent. Only change I made was to cut back on the sugar by half a cup. Works well with other kinds of fruit (raspberries, peaches) and jell-o, too. This is a definite favorite around here!

Asian Lettuce Wraps

Reviewed: Jun. 3, 2012
Delicious. Made as directed, with two changes: put the water chestnuts out separately for those in the house that don't like them, and omitted the green onions. This is a definite remake! We plan to try it with turkey and/or TVP (as per another reviewer) as well.

Extra Easy Hummus

Reviewed: Jan. 26, 2012
Good, but I agree with other reviews that it's a bit bland. I mixed in some homemade taco seasoning (about a tbsp, no salt added) and now have a taco-ish flavored hummus that is quite tasty!

Sweet Summer Smoothie

Reviewed: Jan. 5, 2012
Very good - love that it uses greek yogurt! No extra sweeteners needed. The only change I made was I used blueberry instead of vanilla. Very filling ... feels like I'm eating dessert. :)

Garlic and Ranch Turkey Burgers

Reviewed: Oct. 3, 2011
Good but definitely needs additional binder. I had 20 oz. pkgs of ground turkey, so I used 2/3 cup bread crumbs and 2 eggs (wasn't going to attempt half an egg). Doesn't need the additional s/p. Will definitely make this again - was a big hit with the kids.

Pastitsio II

Reviewed: Sep. 28, 2011
It's pretty good! I did add a touch of cinnamon to the meat sauce, and I think another time might mix the pasta with the sauce instead of layering (the pasta on the bottom got a bit crunchy). It's crazy filling - our crew of seven ate half the casserole.

Pizza Dough I

Reviewed: Aug. 16, 2011
Excellent for the purpose for which it was designed. Only changes I made were to add whole wheat flour for half the flour and we used olive oil. We did two batches and split the dough so that we had four decent sized, thin crusted pizzas (but it was still chewy!). Will definitely be using this one again!

Exquisite Pizza Sauce

Reviewed: Aug. 16, 2011
Big hit with the kids. I only add a tsp of sweetener (as recommended by other reviewers). I think I will try minus the cheese next time!

Taco Pasta Salad

Reviewed: Jul. 31, 2011
Very good. I like that it has the lettuce in it instead of all pasta. Went over well both at church (turned vegan for fasting with no cheese and subbed black beans for the ground beef) and as written for family. Also good with doritos instead of the tortilla chips.

Corn and Black Bean Salad

Wonderful. A friend brought this to a bbq and it's now one of my favorite summer dishes. Use a 15 oz. can of corn, though.

Weeknight Pork Chops

Reviewed: Jul. 19, 2011
Not a big fan. I seared and then baked 9-10 minutes at 425 (7 people, double recipe, would have taken too long to cook on the stovetop), but our issue was more with the sauce. The boys really liked it but dh, dd and I didn't like it much. Reminded me a bit of pickly ketchup.

Sloppy Joe Sandwiches

Very good. Quadrupled (family of 7) the recipe. Only change I will make in the future is to add some bbq sauce instead of the brown sugar, it was a bit sweet for us.

J.P.'s Big Daddy Biscuits

Reviewed: Jul. 8, 2011
Oh my. This northern gal has always been terrified of making biscuits ... no more. I cheated the first time and skipped the rolling/cutting and just did drop biscuits - they are SO GOOD! Especially with fresh butter and honey. Mmmm definitely going in the make again pile!!!
