Chewy Coconut Cookies

I just made these last night. I followed the recipe exactly (did not adjust the flour) and added some chopped pecans. They are wonderful! Not flat, perfectly chewy. I couldn't really taste the coconut at first, but had a couple this morning with my coffee and the flavor seemed to have developed overnight! I will most definately make these again. I'm thinking some pineapple would make them very tropical for the summer months! Thank you!

Raspberry Fudge Balls

I just made this. Being a Raspberry-aholic I added a touch more of the jam. Oh My! Excellent! And so easy to make. Will be a wonderful addition to my cookie/candy trays this year, IF they last that long! Thank You!

Sausage Brunch Muffins

Thanks for the great recipe. I just made these and they are wonderful ! I would serve these, not only with brunch/breakfast, but also alongside any mexican dinner. I had some frozen red peppers strips in the freezer and added just a couple of slices finely diced (for color), and since I didn't have any canned corn, I added a handful of frozen. Came out great. I served them with butter - but they really are good as a stand-alone. I also served them with Jalepeno Pepper Jelly - SUPER good! I might try topping or adding some mexican cheese blend next time or perhaps stirring in a spoonful or two of salsa. Thanks again! PS - I baked these in the Wilton Jumbo muffin pans. I got 12 really good sized muffins - each one a meal in itself! Yum !

Yummy Honey Chicken Kabobs

I just made this last and WOW! I marinated it overnight and put the meat on one skewer, peppers and onions on another, cherry tomatoes and mushrooms on 2 others -- the tomatoes and mushrooms cook fast. I made enough for leftovers, but there weren't any. Excellent recipe -- very tasty. This ones a keeper! Thanks!

Cajun Shrimp Orecchiette

I made this for dinner last night and it was fantastic. I followed the recipe exactly and it was great. Quick and easy to toss together. I would serve this at a dinner party as well. Salad, a glass of white wine and some garlic bread -- is all it needs to round it out. My boyfriend took the leftovers to work and 2 people asked for the recipe. Thanks - this ones a keeper!

Easiest BBQ Pork Chops

I did not care for the sauce on this at all. As others suggested, I substitued half BBQ (Sweet Baby Rays) for 1/2 of the ketchup. The combination of ketchup/BBQ sauce and cream of mushroom soup created a sauce that had the consistency and taste of the sauce found in canned spaghetti. I use my crock pot all the time, and usually I simply brown the chops, put them in the pot and top with BBQ sauce and, sometimes, sliced onions. But creamed BBQ sauce is a whole other thing. I'll stick with my old tried and trusted recipe from now on.

Amazing Gluten-Free Layer Bars

I'd give this 6 stars if the option were available. My oldest daugher has Crohn's disease and is on a gluten-free diet. She LOVES these! I'm on no special diet and love them too. In fact, everytime I make them, they disappear. I've been asked for the recipe each time I make them and when I bring them to work, they disappear within minutes! Thanks so much! Wonderful!

Tiramisu Toffee Dessert

OMG! This is awesome! Thank you so much for sharing. I followed the others advice and whipped the cream separately. It only took about 2 minutes with my Mixmaster. Ditto for the cream cheese/choc/sugar mix. I ran out of both Baileys and only had about 1/4C of choc syrup, so I tossed in some Ghiardelli's cocoa powder and added about a tablespoon of Bacardi's rum. The filling could be a stand-alone dessert on it's own. I used instant espresso to make the coffee and used lady fingers in place of the pound cake, since that's what I had on hand. Made 2 layers and used the coffee soaked cakes, a handful of heath bar bits and the filling for each. Topped it with the filling, a generous drizzle of caramel syrup and sprinkled it over with more Heath Bits. Amazing and SO easy! I'd give this 10 stars if the option were there! Thanks again!

Fiery Pork Skewers

I love this recipe. Like some other users, I too add peppers, onions, (really whatever I have around) to the skewers. I made this once - at the last minute - with no time to marinade the pork. I just place the pork and veggies in a bowl with the sauce and then skewered them and put them right on the grill, Marinading while cooking. Guess what? No difference in taste! Thanks for the recipe

Margaritas on the Rocks

These are the BEST! I've had many a margarita in my day, but these are the absolute best I've ever made. The first sip is a killer, but after that, they go down very smooth. Careful - they give quite a kick! Thank you for the recipe! Enjoy everyone!

Potato and Bacon Salad

My family has made their potato salad this way for over 40 years! I add more bacon, add a finely chopped small onion (optional) and only use the eggs if I'm in the mood! I always get rave reviews with this - and everyone who's ever tried mine, are now adding bacon to theirs!

Cabbage Fat-Burning Soup

1.6.09 Update - This freezes extremely well, makes a lot of soup for just a little effort. Using the V8 spicy and the canned diced tomatoes with jalepno gives a nice kick! I'll also top it with a sprinkle of fresh grated parmesan cheese on the days I'm feeling really hungry, or just need a good bowl of comfort food! A great winter soup! Do try it! ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ I had totally forgot about this recipe until it showed up here today! I've been thinking about losing a few pounds so I went out and bought the ingredients. The only substitutions I made were to use Hot & Spicy V8 in place of the tomato juice, I used canned diced tomatoes with jalepeno's and I added about 1/2 lb of ground turkey and a can of chick peas for protein. I also left out the green pepper as I don't care for it. I did not add water as the juice was enough to nearly cover the veggies. And I simply let them cook down into the juice. This is SOO good -- much better than the recipe of years past! I may actually stick to the diet this time! Thanks! :-)

Spanish Potato Omelet

I grew up on this recipe and have made it for the 30+ years I've been cooking! My father was from Kansas, and I always thought it was a US-mid-west recipe! So I've learned something new here (does this mean I can now say I'm experienced in Spanish cuisine?) LOL! This recipe is great - it's real comfort food to my family and very quick and easy to make! (btw - my mother always just called this Potato - Onions & Eggs!

Crunchy Turkey Salad

Great Recipe! I just made this using leftover dark meat from my holiday turkey. I followed the recipe as written except I didn't use celery since I didnt' have any leftover. Came out GREAT... the dressing is very good and I would use it on macaroni salad, etc., in the summer. Thanks!

Dirty Martini Cheese Spread

Fun presentation! Great for the holidays using chopped stuffed green olives (festive!). Taste was OK .. defintiely has a vodka kick. Heavy olive taste (obviously!) so don't serve it alone if you aren't sure your guest like olives!
