Too Much Chocolate Cake

This was a phenomenon cake recipe! I was a little concerned when making it because it was very thick - there was no "pouring" it into the cake pans. However, it came out beautifully. It was rich and moist. I used two 9 inch cake pans (done after 40 minutes). While this may be chocolately enough on its own, my husband is a choco-holic, so I iced it with chocolate mousse (I used the chocolate mousse cake IV recipe on this website). I cut each cake in half length-wise, and layered the mousse in between the four layers. My husband and co-workers absolutely loved it. This is going to be my go-to cake recipe for now on.

Autumn Cheesecake

I've been looking for this type of recipe for a long time, and I am very happy I found it. I used this recipe as a base and made some modifications to it. I used 1.5 times the cheesecake recipe (i.e., 3 packages of cream cheese). I microwaved the apples for 2 minutes and then layered them on top of the cheesecake. I then mixed together the sugar and cinnamon and sprinkled it on top of the apples. I added a streusel topping to the cheesecake, and I served it with caramel sauce drizzled on top. It came out great! I took it to our office lunch, and the whole thing disappeared in no time. I recommend using green apples; using sweet apples would be sweetness overkill. Everyone commented that this cheesecake had an appropriate level of sweetness. I will definitely be making this again.

Coconut Macaroons II

These were okay. Flavor wasn't bad and they were very easy to make, but I wasn't wowed by them. These definitely do need to get removed from the pan immediately as they will begin sticking. Contrary to everyone else's experience about having better results if they refrigerated before baking, I actually had a worse result. I made a batch and immediately baked, and they held their form fine. I refrigerated the next batch for about 20 minutes, and these ones fell apart when I tried to remove them from the pan, and I even baked them an extra 2 minutes. I probably won't make these again.

Asian Tuna Patties

I did not care for these at all. I took four bites and threw the rest away. The husband did not care for them either. I followed the recipe exactly, but I thought they were mushy and the flavoring was bad. Also, the cornmeal seemed a little unnecessary to me. I can't even think of a way to improve them, hence the 1 star.

Mexican Egg Rolls

Very tasty! I added some rice to them, served them with salsa and sour cream, and we really enjoyed them. In case anyone doesn't know where to get egg roll wrappers (we certainly had to perform a hunting expedition): if you go to an Asian grocery store, we found them in the frozen food section. This past week I was at our local grocery store and found them in the produce section with the tofu.

Lemon-Pepper Salmon II

I used this recipe when I made salmon for the first time, and, despite my errors, it came out great. I thought I knew more about how to cook salmon than the recipe did, so I was cooking it on low, and after 20 minutes, the salmon was fit for sushi. So, I turned the temperature up to medium (as the recipe suggests), and then it started cooking! The butter started burning in the pan, but it ended up coating the salmon and blackening it, which we actually ended up loving! The second time I made it, I kept the temperature at medium, but flipped the salmon a couple times, letting the butter burn onto the fish. Maybe not how the recipe intended it to turn out, but we think it tastes great like that. The lemon pepper adds a great kick to it, so I make sure to apply it liberally.

Macaroni and Cheese V

This is the same recipe I have been using for years, and I adore it. I don't add the bread crumbs to it, and I prefer it that way. The last time I made it I didn't have any dry mustard, and it definitely changed the flavor of it (made it more bland), so I really recommend that people not omit the dry mustard.

Fried Rice I

Excellent! This recipe was so simple to make, and it tasted great. I added a few additional vegetables to it, slightly increased the soy sauce, and cut out the bacon, and I was very happy with the results. Maybe not as good as restaurant Chinese, but I will definitely be making this again.

Penne with Chicken and Pesto

This dish was okay. I followed it exactly, but I didn't think it had much flavor. My fiance spent most of the meal shaking the sauce off of his because he felt like it was too creamy. If I ever make this again, I'll be doing some significant alterations to the recipe.

Great recipe! I switched the white sugar to brown sugar and added approx. 1 tsp of cinnamon to it, and we loved them. Very moist and soft. The dough was a little sticky, but I was able to knead it without a problem. I will definitely be making these again.

Turkey Tortilla Soup

Great tasting! I hate turkey leftovers, but I love tortilla soup, so this recipe came in handy. I followed other advice and did not add tortilla strips to the broth. Instead, I baked some tostada shells, and then broke them up into bits and added them at the very end when I was about to serve the soup.

Baked Haddock

This was a great recipe. Neither my fiance nor I are big fish eaters, but we are on a mission to start eating it more, so I used this recipe. I couldn't find haddock at the store, so I got tilapia instead, and I thought it came out great. We will definitely be making this again. The only thing I would do differently is add some butter to the bottom of the pan instead of just pouring it over top of the fish.

Turkey Pot Pie II

I thought this recipe was great. Very easy and it tastes great. I followed other advice and added some seasoning to it. The only "problem" I have with it is that the center of the top crust never seems to get as done as the outer edges, but that could be because of the crust I'm using. One of these days I'll make my own pie dough and see if that makes a difference. Overall - excellent recipe!

Chicken and Cheese Stuffed Jumbo Shells

I made this recipe once with an alfredo sauce and once with a tomato sauce. We definitely liked the tomato sauce better. The alfredo sauce makes it a little too creamy for my taste with all the cheese that is in it. Otherwise, it was pretty good. I would aim for less tomato sauce as opposed to more. If there is too much sauce on it, the flavor of the chicken seems to get lost.

Irish Brown Soda Bread

My co-worker is from Ireland, and when she tasted this bread, she said it was as close to the bread back home as it could get. I made one big loaf (per my co-worker's instructions) instead of the four little ones. I baked it an extra 10-15 minutes, and it turned out real nice. You definitely need some REAL butter on it though; that really adds to the flavor. Great recipe!!

Cream Cheese Frosting II

I LOVED this frosting! It had excellent flavor. I used it on cinnamon rolls, and because I had so much left over, I made a spice cake and put the frosting on top. I would definitely cut this recipe in half if you are only making cinnamon rolls or one cake--it makes so much.

Ninety Minute Cinnamon Rolls

I thought these rolls were really good. It took me longer than 90 minutes to make, but they were worth the wait. The only problem I had was that a lot of the cinnamon filling oozed out during the baking, but we just scooped it onto the rolls. They were very light and not overly sweet. I added a cream cheese frosting to them.

Double Chocolate Pie

Very good!! I only had semi-sweet chocolate, so I cut out a 1/2 cup of sugar, and I thought it tasted great. I covered it in whipped topping, and it definitely needed it because it otherwise has a very rich chocolate taste. The whipped topping helps cut the chocolate a little.

Garlic Mashed Potatoes Secret Recipe

I LOVE these mashed potatoes, and I generally do not like mashed potatoes. I cut the recipe to 10 servings and cut the butter in half, and they still had awesome flavor. They are really thick, which I love but it was painful to my Mom to not be able to beat them and drown them in milk! I will definitely be making these potatoes again!
