Summer Chicken Burgers

Triple Berry Crisp

My absolute favorite recipe for a berry crisp. I have made it using the three different berries, with just blackberries, with just bluberries, and finally a combination of bluberries and nectarines. Comes out perfect everytime. I have also found that using margarine gives a chewier crisp as compared to a more crumbly crisp when using butter.

Taco Seasoning I

Fantastic! I tossed uncooked chicken breast slices, red and green bell pepper strips, and sliced onion in the prepared seasoning. I then added some olive oil, 3/4 cup of beer, 1 tsp. soy sauce, minced cilantro, and freshly squeezed lime juice to the mix. I marinated the chicken and veggies for about 2 hours and cooked everything in a skillet. This made a great fajita/taco filling.

Gluten-Free Yellow Cake

I unfortunately can't eat wheat, so I made GF cupcakes as well as normal cupcakes for my boyfriend's birthday. These turned out just as good as the wheat flour-based cupcakes. His fraternity brothers actually preferred the GF cupcakes! I followed the suggestions of previous reviewers and added 1/3 cup more sugar and 1/2 cup unsweetened coco powder to make chocolate cupcakes. I cooked them for about 19 minutes. Perfect!

American Lasagna

A perfect lasagna with a few alterations. I am not a fan of dry lasagna, so I doubled the sauce and used about 2/3 of it to make the dish. I also added grated carrot to the sauce and decreased the amount of sugar. I used a combination of ground beef (1/3 lb) and spicy italian sausage (1/3 lb). I'm allergic to wheat so I used Tinkyada rice lasagna noodles (available at Whole Foods) in place of traditional lasagna noodles. They tend to absorb a lot of liquid and become mushy so I boiled them for less time and relied on the extra sauce to cook them through. Great lasagna can still be enjoyed by those of us who are gluten-intolerant. Everyone loved it!

Avocado Soup with Chicken and Lime

A fantastic soup! I chose not to bake the corn tortilla strips for a garnish and used the crush corn tortilla chips that I had on hand instead. They worked just fine. I only used two jalapenos and three cloves of garlic. Eight cloves seemed like a bit too many and I don't prefer my dishes to be overly spicy. I also added some cumin to the soup as the chicken cooked. Instead of fresh tomato, I used a can of Rotel diced tomatoes with green chilis. My boyrfriend and I (both mexican food enthusiasts) really enjoyed this soup.

Pesto Cheesy Chicken Rolls

I was in a hurry to make dinner for my pesto-loving boyfriend so I chose not to stuff the chicken with the pesto and cheese. Instead, I seasoned chicken breasts with garlic salt, pepper, and oregano and seared them in a grill pan. After browning both sides, I placed the breasts in a baking dish and topped each with pesto sauce. In the final minutes of baking, I placed thick slices of mozzarella on each chicken breast and put my oven on broil to melt the cheese. I served this with a side of linguine and steamed broccoli. Fast, simple, and delicious. My boyrfriend gave it two thumbs up!

Bean Soup With Kale

I love this soup. It is so healthy and flavorful. Kale might discourage some from making this, but I assure you that you'll be glad if you do. Kale is a popular staple at local farmer's markets here in Seattle. It is full of fiber and nutrients. I top this soup with parmesan cheese and sometimes add an extra can of mashed canellini beans for extra creaminess. Thanks for a great recipe!
