Corn and Black Bean Salad

I made this for a pot luck since my friend is a vegan. It was a BIG hit!! I get asked to bring it all the time. I added diced avocado which adds another texture. Great as a salad or served with corn chips as a dip.

Chess Pie

This was an awesome recipe! Very easy to make and a simply wonderful pie. The only change I made was to add an extra egg since I like my custard pies to be a little "eggy." My Daughter has Celiac so I pulled out a little custard before adding the cornmeal (mine is not GF) and baked it in a custard dish in a water bath - she loved it! I served it with Cool Whip because our family believes there are not many desserts that can't be enhanced with a little CW. I will be making this pie again! (and again, and again...)

Cream Cheese Frosting II

This IS eat w/a spoon worthy! Classic, simple cream cheese frosting just like it is supposed to be. Not too sweet - perfect.

Banana Nut Bread

Very quick, very easy and very good! Moist and yummy. The only change I made was not using the pecans (husband doesn't like them) and added chopped dates. The basic recipe is great!

Golden Bread Pudding

This is a very good recipe! I made it last week and followed the recipe - it was very good but also very "wet." I did cook it a bit longer to dry it out a little. This time I left out one of the cups of water and it was perfect. I am giving it 4 starts because it is very good but because of the additional water stated it needs a bit of tweeking. It was a HIT at work.

Easy Chicken Enchiladas

Very good and my Husband LOVED it! I layered the tortillas instead of rolling and used Ranch Style beans - drained not rinsed. It was good enough for seconds! Very easy.

Pineapple Cake I

This was goof for a snack cake however the texture and flavor were not what I had expected. I followed the recipe exactly - however I added a powdered sugar glaze on top (powdered sugar, water and pineapple exract.)

Broccoli, Rice, Cheese, and Chicken Casserole

This was very good and simple. I had to make several batches and was easy to multiply. I did add a generous dash of tabasco and used grilled chicken - I also used shredded cheese which mixed in really well. I cooked the rice in the microwave. On my second batch I added a little salt (not too much). I will make this again.

Cheesy Ham and Hash Brown Casserole

Easy Sausage Strata

This was VERY easy and very good. I used the basic recipe however I made a few changes. Instead of Italian sausage I used Pepper Jack Turkey sausage that I chopped. I also used pre sliced French bread (it was not thick sliced) and didn't cube it. I lined a 9x13 dish w/the bread, topped w/the chopped sausage and sauteed green onions and 1/2 of the egg mix then another layer of bread and finished w/the rest of the egg mix and topped with cheese. The slices gave it a very pretty, uniform look and it ended up being like a stuffed, savory french toast - YUM! It was all gone but one piece that I ate later! I can recommend this recipe.
