Simple Garlic Shrimp

Ir was good not great but good. I did have to keep adding water so the sauce wouldn't thicken. But other than that it was tasty. Tossed it over some thin noodles and voila (pronounced wah-lah, lol)!

Garlic Brussels Sprouts with Crispy Bacon

I guess I put my own spin on this, but it came out great. Hadn't eaten brussel sprouts since I was a child and I recall disliking them. I cut the brussel sprouts in half and set them aside. I cooked the bacon til it was crispy, then set to the side and crumbled it. When the bacon was done, I put the sprouts in bacon grease flat side down and added a dab of margarine/butter so there was enough grease, then added chopped/minced garlic, pepper and a garlic salt to taste. Flipped them over to cook the other side. Added the bacon a minute or 2 before the brussel sprouts were done, and then drained all the grease. They were amazing. Still had a nice, soft crunch, because we hate soggy veggies, and the flavor was great. Left out the chicken broth all together. Again, just my spin on it. But the basics for the recipe were awesome.

Roasted Rack of Lamb

I do not eat lamb, but my other half enjoyed it very much. It was actually my first time every making lamb so I was a bit nervous about how it would turn out. I followed the recipe exactly, except I used Lamb Chops because my store did not have a rack of lamb. He did say he would like for me to make this for him again.

Fruit Dip II

I had this at a party that was hosted for a boxing match...AMAZING! It was served with stawberries and pineapples. I raved about it and will definitely be making this, especially in the summer time with summer fruit.

Honey Walnut Shrimp

I've made this dish a few times and I think it's amazing! I know some people thought it was a little sweet, but that's contingent on who's tasting it. I would suggest starting with half the amount of honey and sweetened milk first and adding more according. But I love it!!!

Texas Hash

Very good and quick. My kids loved it! I didn't use instant rice. I used regular rice, cooked it and add it all together to bake. I also used only 4 - 6 oz of tomato sauce so it wouldn't have an overpowering tomato tatse. Other than that it's awesome and I will be making periodically.

Mexican Rice II

Just made this rice. It was good, not great but good. Only modifications I made was that I added bell pepper and minced garlic when I added the onion. And I also unsed chicken stock from the chicken I boiled for chicken tacos, instead of canned chicken broth. Other than that I followed it exactly. And I have no complaints. I will make it again unless I find a better recipe.

Fabulous Wet Burritos

Really good recipe. I did use the chili for the topping, only the enchilada sauce and tomato soup. The more tomato soup I added, the less I like it. Next time, I will just use 1 can of Old El Paso Enchilada Sauce (medium) to make my burrito wet and skip the tomato soup. Also, I used homemade refried beans, which are always better if you can make them. Other than that, this is a keeper! 4 stars from me!!!

Refried Beans Without the Refry

A good recipe. I did however make a few changes. I used 1/2 chicken broth instead of 1/2 water for a little more flavor. Also omitted the jalapeno. And I'd use a little less regular salt and substitute with season salt and/or garlic salt. Other than that, it's a great recipe. I used have for burritos and the other half I reserved the liquid and had over rice. A keeper!

Habanero Hellfire Chili

Really good and really spicy. I didn't use the ground pork because I don't eat pork, but I did substitute with a beef sausage and it was amazing. Had to use a little less of the spicy seasonings because I had little ones eating it as well, but it was very flavorful!

Better Burger Sauce

It was a nice change on the burgers, almost like Jack in the Box's old sauce they used to use on Jumbo Jack's. I'd use a little less relish, so it doesn't over power the taste, but all in all, it's simple and tasty.

Roast Sticky Chicken-Rotisserie Style

This is in my regular rotation of meals. I actually used the rub for my turkey last Thanksgiving and it was a hit. I add a can of chicken broth while it's cooking and it's amazing!

Shrimp Creole IV

VERY GOOD! I DID OF COURSE, MAKE A FEW MINOR ADJUSTMENTS. INSTEAD OF TOMATO SAUCE AND 4 TOMATOES, I USED 1 LARGE CAN OF DICED TOMATOES AND 1 6OZ CAN OF TOMATOE PASTE. ALSO, WHEN SAUTEEING THE ONIONS, GARLIC, CELERY ETC, I ADDED A CUT OKRA. LASTLY I ADDED SAUSAGE TO HAVE A MORE MEAT VARIETY. OVERALL A GREAT RECIPE. WILL MAKE AGAIN AND AGAIN, I'M SURE! THANKS FOR THE RECIPE!!!

Grilled Peppers

Spicy Shrimp Creole

I enjoyed this one! I did opt to make a few modifications. I used a small can of tomato paste instead of sauce so it wouldn't have a overwhelming tomato-y taste. Then added 1 cup of broth, added okra...WALAAAA!

Chicken Tortilla Soup II

NOT BAD. I WOULD HAVE TO AGREE WITH OHMYDAHLIA, THAT THERE WAS SOMETHING MISSING AND I CANT QUIT PUT MY FINGER ON IT. I THINK A LITTLE EXTRA CUMIN WOULDN'T HELP. ADDED CORN AND BLACK BEANS, AND TOPPED WITH SOUR CREAM AND CHIVES. WILL DEFINITELY PUT IN THE ROTATION.

Baked Beef and Bean Chimichangas

AWESOME!!! Made a few changes though..used shredded beef, because I'm not a fan of ground beef, and I also subbed green taco sauce for the salsa. I was a bad girl and fried it in a little oil, then topped with lettuce, tomato, sour cream, and guacamole. Other than that, fantastic recipe. Thanks a million Pam.
