Oatmeal Apricot Squares

Pecan Pie IV

I made this tonight and it must have been the easiest pie I have ever made. It came out very well. Everyone loved it. I placed the pecans on top of the pie rather than folding them into the batter for a more decorative presentation and served warm with vanilla ice cream. Yummy. Thanks for sharing.

Mushroom Risotto

This is an outstanding recipe. My picky son who says he hates mushrooms loves this risotto. I use shallots instead of garlic because garlic doesn't agree with me. My bf can't stop eating it when I make it. It is worth the effort.

One Egg Lemon Pound Cake

This was exactly what I was looking for. I have now made it twice and my kids and bf loved it. It took longer than 30 minutes to bake though - more like 45-50. The second time, I added one cup of frozen cranberries for extra tartness. Easy and delicious. Thanks for sharing the recipe.

BAKER'S ONE BOWL Macaroons

These were incredibly easy to make and absolutely delicious. Everyone loved them and asked for the recipe. I will be making these at Passover for sure. I would love to make them with chocolate but am not sure how much melted chocolate to put into the recipe.

Chewy Chocolate Chip Oatmeal Cookies

These were amazing. Everyone loved them. I omitted the nuts and made 1/2 of the batter with chocolate chips and 1/2 without. My kids and I prefer them without the chocolate chips. Thank you for the recipe!

Pear and Brie Quesadillas

I made this over the weekend without nutmeg (my BF did not have it at his house)and it was still delicious. We really enjoyed it and it was good cold the next day as well. Next time, I am going to try it with nutmeg. Very easy and fast to make! Thanks for the recipe. I would not have thought to put those ingredients together.

Lemon Square Bars

These came out great! A very easy recipe to follow too. I cut the recipe in half and I think that it probably needed 25 minutes in the oven rather than 30. My picky 10 year old loved it, as did my co-workers, even the ones that said they are "not big on lemon". I followed other people's suggestions and cut the sugar (I used roughly 3/4 cup and found the result to be perfect - not too sweet) rather than 1 cup and I used two tbsp. less less butter as well. The crust came out like shortbread. Thanks for the great recipe!

Strawberry-Mango Mesclun Salad

I have been making this salad for a few months and it is always a HUGE hit. Last night, I made it with Whey-Low (a sugar substitute) and it tasted exactly the same as using sugar. I like to add any kind of seeds, including flax seed to it, for texture, in addition to the almonds. Add the dressing right before serving as it gets soggy if it sits to long. Regardless, there is never any salad left, soggy or not!

Candied Carrots

These were delicious. I made them ahead of time by boiling them, draining the water and adding the butter and brown sugar. I didn't add any pepper. Before serving, I put them in the oven to warm them up and thicken the sauce. Delicious.

Sweet Potato Casserole I

This was very good. I omitted the flour, orange zest and coconut and it still came out great. Next time I will boil the sweet potatoes to save time and I will add a little more milk to make it creamier. Thanks for the recipe.

Rugelach III

This was my first attempt at rugelach too and I found the process time consumming but worth it. The dough was very easy to make. Be sure to use flour when rolling it otherwise it will be sticky. I baked them on parchment paper which worked wonderfully since the filling does come out. They lifted right off. I made some with chocolate (I used a dark chocolate spread but Nutella work well too) with crushed nuts. Be sure to roll out the dough fairly thin. I found that to be key. Once the filling has been spread, I suggest rolling the entire thing and then cutting it using a pizza cutter. They come out log shaped that way but they still look nice and it is less time consumming. Thanks for the great recipe.

Awesome Slow Cooker Pot Roast

This was delicious. My friend's picky young children couldn't get enough of it. I suggest cutting up the roast about an hour or two before serving so that each piece get smothered in the sauce.
