Spinach Enchiladas Verde

Wow! I would have given this 5 stars, but I changed a few things to suit my family's tastes. That said, this is a fabulous one to play with!! I shredded rotisserie chicken and added chopped fresh cilantro, mushrooms, and thinly diced onions - YUM!! Then, I doubled the salsa - mixing 2 (7oz) cans of Herdez Salsa Verde with 1 C sour cream - and mixed about 1/2 of that in with my chicken mixture. Oh, I also added the shredded MJ cheese directly to the chicken mixture. Divide the filling evenly among 10 whole grain (corn is too difficult to work with) tortillas and roll them up. Spread remaining salsa mixture over the top of rolls and cook for 20 minutes at 350. I served with spanish rice and got rave reviews from my DH!!

Super Easy Chicken Noodle Soup

With a few changes, this was a hit . . . and the leftovers were fantastic too! I used 2 lb chicken, 8 cubes of knorr chicken boullion, 2 cans cream of chicken soup, 10-12 cups water, 2 bags frozen egg noodles, celery, carrots, and vidallia onion. Fantastic!

Butterscotch Bread Pudding

This is a fabulous recipe! Per the suggestion of others, I cut the brown sugar by a quarter cup. Then, the only other change I made was using fresh bread, since I didn't have any thing else on hand. I did, however, use a French Parisian Bread (very hard crust with soft inner). The result got rave reviews. My husband, who doesn't even like bread pudding, said this recipe was a keeper. Truly excellent!!!

Golden Rum Cake

This is a fabulous recipe just as it is. Funny story: the first time I made it I forgot to add the eggs (don't ask). Obviously, the cake did not set up. Although I would NOT recommend leaving the eggs out, the end result was still so yummy that we put it in bowls and served it over ice cream . . . looked like cobbler and was still delicious! HA, who would've guessed!
