Low Sugar Strawberry Rhubarb Crunch

This was one of the only things my husband wanted to eat while he was having chemotherapy. He would eat the entire thing in one sitting! I also added a little bit of flour or corn starch to the berries to keep the mixture from getting to soupy, and used agave to sweeten the berries instead of honey. This is also really good with some freshly ground nutmeg added to the berry/rhubarb mix and a little salt added to the topping. All said, simple to make after a day at the hospital and delicious enough to tempt a leukemia patient with no appetite!

Homemade Banana Pudding Pie

Amazingly good, but a bit too sweet for my family. Easily remedied by cutting the sugar back to 3/4 cup. Also tasted delicious with ginger snaps instead of vanilla wafers and bourbon instead of vanilla, just for a change of pace, but is absolutely delicious as it.

Italian Wedding Cookies III

I made these as favors for our vow renewal ceremony and they were delicious. I used 1 TBS vanilla and 1 tsp almond extract and they were unbelievable.

Sicilian Ricotta Cheesecake

A ricotta cheesecake is NOT anything like a New York style cheesecake. If you're expecting something sweet and gooey and creamy, you WILL be disappointed. However, this is a fine dessert in its own right. It is lightly sweet, dense, and retains a slightly grainy ricotta texture. It is lovely with fresh raspberries and lemon curd. But don't make this recipe expecting it to be like something off the Philadelphia Cream Cheese box and then give it one star when it's not. This is not an Americanized Cheesecake.

Carol's Chicken Chili

This is an awesome way to use up leftover chicken. I upped the spices a lot, but kept the proportions the same (we like spice--it may have been too brave for others). If you are lazy like me and don't rinse your beans, DO NOT ADD SALT. Make a double batch, because this tastes even better the next day.

Baking Powder Biscuits

We love these at my house! Instead of rolling them, we drop them by the spoonful (I know, I'm a bad southerner. . .) They come out REALLY light that way and then I don't have to roll them. You can whip up a batch in five minutes!

I say AWESOME!! Take the advice of the others--beat the egg whites into oblivion. I also added about an extra cup of coconut to make them more moist. An excellent recipe!

Cappuccino Bon-Bons

These were awesome. Everyone loved them. We made them as described and also with the vanilla hazelnut cappucino mix. They were both excellent. We will definitely make this again. Also, it's better to underbake them. Then you get a nice mushy center.

Easy Indian Style Okra

We "heart" this okra! It's also very good if you add a diced tomato and some chili powder. We've made this several times and you can subtitute olive oil or smart balance for the butter and it doesn't detract in any way.

Banana Cake II

Three people have already asked me for the recipe. I used the cream cheese frosting 1 recipe with a banana added. You have to add more powdered sugar to compensate for the banana, but it is excellent.

Rice with Black Beans

We called it "pizza rice" and gave it to our three year old, and she ate it like it was going out of style! I made it with brown basmati rice and served it with a side or turnip greens. Awesome meal.

Safta Miriam's Passover Seven Layer Cake

I made two, figuring that something that small wouldn't feed the entire seder crowd. I was WRONG. This "cake" is so rich and so good that all 16 ate the one cake, and I sent the other home with the host. Good golly, this is good!!

Moist Garlic Roasted Chicken

Excellent recipe. I baked it in a roasting bag and also chopped the garlic and thyme, added it to butter, and rubbed down the chicken with it. The juices in the bottom of the bag make an excellent gravy.

Best Ever Banana Bread

Excellent recipe to play with! We added chocolate chips instead of pecans, reduced the sugar to 3/4 cups white, 1/2 cup sucanat, upped the buttermilk to 1/2 cup, used 1/3 cup applesauce and 1/4 cup lite olive oil instead of the 1/2 cup of oil, and added 1/4 dutch process cocoa. Tasty!!!!
