German Plum Rolls (Zwetschgenschnecken)

Reviewed: Apr. 8, 2008
Very nice - this turned out quite delicious. I think the recipe has mistake, though, since 1/4 cup of baking powder is a LOT!! I used only 1 tsp. I also accidentally used too little of the cream cheese and the dough felt like it needed more stickiness - either more cream cheese or an egg. Also, didn't have the plum butter so I used home made pear-sauce (like apple sauce). It was a lot of work - rolling it up is not easy and in the future, I would use baking paper underneath to help support it. All and all, though, lot of fun and a good recipe. Thanks!

Best No-Bake Cheesecake

Reviewed: Jul. 4, 2007
this was a very nice and easy cake. For the base, I used a chocolate cookie recipe that I have, which I made in the shape of the bottom of the pan and then baked, then put the cheese cake on top. I added banana slices to the cake. It was tasty but very very rich and sweet! Next time I'll try to tone it down a bit somehow. Thanks!

Rice Pudding (Kheer)

Reviewed: Jun. 3, 2007
I was very pleased with this recipe. I used 3 cups of goat's milk, 1/2 cup of sugar, 4 cardomon pods, 1 tsp of vanilla, and 1/4 cup of rice. i followed the cooking directions exactly and it turned out great, a bit too sweet. Next time I will use a little less sugar. Thanks!

Mexican Chicken Corn Chowder

Reviewed: Jun. 2, 2007
This was pretty nice. I used 1 ear of fresh corn and threw it in; it got cooked just fine. I also used goat's milk and 1 tbsp of butter to substitute for the half-and-half and it tasted good. It works well to eat with slices of avocado, too! Will make again.

Chocolate Zucchini Bread I

Reviewed: Apr. 22, 2007
I thought this was really nice, but mine turned out a little strange. I used 1 cup of apple sauce and no vegetable oil, also trimmed the sugar down to 1.5cups. The consistency turned out a bit like bread pudding. It still tasted good though. Next time I will use 1/2oil and 1/2 apple sauce and also not add the cinnamon, since it overpowers it a bit.

Mexican Rice III

Reviewed: Mar. 18, 2007
I was surprised how well this turned out. I followed other reviewers' advice: i added onion right away w/ the rice, then garlic shortly after, then the stock, boil, vegetables, low heat for 20 min. I didn't have cumin so I added some cayenne pepper and it was still delicious! I used it for a burrito with some beans, chicken marinated and sauteed in salsa, and avocado and it was great! Thanks

Eggplant Parmesan II

Reviewed: Mar. 10, 2007
I followed others' advice about sweating and baking the eggplant beforehand. I found that it took a lot longer for the eggplant to bake. Also, I only used 1 eggplant and 2 eggs weren't enough even for that. The rest of the recipe I followed it as it said. I was making for just myself, so I just used half a large glass pan and it worked out fine. Also, since I love broccoli I put it in the dish as well (raw, on the same level as eggplant) and it turned out great. Will definitely make again. Thanks!

Banana Chocolate Chip Cake

Reviewed: Mar. 4, 2007
this turned out just the way i like it: crispy on outside and moist on inside. this was my first time baking anything and it went off without a hitch. Following the reviews, I doubled the recipe. I also added a tsp of vanilla. Will definitely make again!

Cucumber and Avocado Sushi

Good recipe. Added a bit of soy sauce and touch of sesame oil to the rice. I also went for a bigger sushi so in addition, added a bit of scrambled egg and carrot. It was great

Fresh Tomato Basil Sauce

Reviewed: Feb. 5, 2007
This was a simple and tasty recipe. I made much less sauce, using these proportions: 3.5 big fresh tomatoes, diced and not seeded, cooked w/ 1 hot chili pepper and 1/4cup of basil. 1/2cup red and 1/2 yellow onions w/ 3 tooths of garlic in olive oil. Slowly, while the sauce was simmering, I kept adding another 1/4cup of chopped basil. Took about 2 hours and was fantastic.
