Taco Seasoning I

This is my go to taco seasoning recipe. I don't buy packaged seasoning anymore! I usually use ground red pepper instead of the large flakes, because I have kids and they would not like if they bit into a big piece of hot pepper. I use about 1/8 t of it, and sub the water with blended stewed tomatoes. It's so good!

BBQ Dry Rub

This was DELICIOUS! I followed the recipe as written (scaled down to 6- covered 8 chicken legs perfectly with a little left over). I'll be using this for all of our BBQ chicken and pork from now on.

Camp David Spaghetti with Italian Sausage

The bones of this sauce are good, but I felt it needed something... I used 3 links of sausage instead of 2. Like other reviewers, I sliced in half and cooked, and then crumbled it in while simmering. I also added an entire 28 oz can (juice and all) of whole peeled tomatoes, but cut them into smaller pieces as I have picky family members. I couldn't find fresh oregano at the store, so used dry in 1/2 the amount. After all together, my taster told me the sauce needed more depth to counter the salt and meat, so I added 1 can of tomato paste, 1 c of water, and about 1 T of sugar. Now it's perfect!

Fasoliyyeh Bi Z-Zayt (Syrian Green Beans with Olive Oil)

I've been making these for about five years now, and have never written a review. This is a great recipe. Delicious just as is, but I usually add a touch more garlic to my personal taste. Yum! Try it- you won't be disappointed!

Eyes of Ox (Ojos de Buey)

These are delicious, and a favorite appetizer with my family for all events!! I've been making them for the last 2 1/2 years ever since I had them in Nicaragua and had to have the recipe then and there! They are so simple...it's hard to believe they'd be so good. Make sure you halve the bacon as a whole strip is too much (it doesn't cook up nice and crisp with a whole piece-- I can't really handle "slimy" bacon!). While prunes aren't bad on their own, everything's better wrapped in bacon!

Broccoli and Sausage Cavatelli

This is delicious! I made a few changes as per other reviewers recommendations. I deglazed the pan with some white wine and added a small onion with the olive oil and garlic. After it had cooked to transparency, I added two 14 ounce cans of tomatoes with basil, etc. I cooked this for about 1/2 hour, until the tomatoes softened. I also added a small amount of salt, pepper, and a little extra basil. I increase the red pepper because my hubby likes his food spicy, and I add it straight to the tomato mixture. I've used both regular Italian and Italian turkey sausages, and found that both taste good in this. The major difference is the texture. Since I couldn't find cavatelli in my local stores, I used tri-colored farfalle. It was delicious and pretty. Also, make sure you use the baby broccoli florets. It's so much more flavorful and tender than the cut broccoli. I follow everything else as written, and this is GREAT! It's a weekly meal in my house. Give it a try! You won't be disappointed!!
