Sugar Cookie Icing

Reviewed: Dec. 19, 2008
Wow! this recipe is amazingly delicious, shiny, and simple. I have made it twice now for two seperate batches of gingerbread men. The first time, I prepared the recipe as written. The second time, I used clear vanilla extract and added a pinch of ginger and cinnamon to give it a special kick. I love how you really don't have to formally measure the ingredients, just keep mixing and add the milk little by little until you get the consistency right. The icing sets so beautiful! Glossy, firm, and stays that way. Awesome recipe!

Storybook Gingerbread Men

Reviewed: Dec. 19, 2008
I doubled the recipe to give me a nice army of gingerbread men. I ended up cutting the molasses with about 1/4 cup of honey because when I smelled the molasses, I became horrified and worried I wouldn't like the cookie flavor. I added all other ingredients as written. The dough is wonderfully easy to work with, unlike Eileens Spicy Gingerbread men. I baked them for about 9 min and they came out crispy on the edges, tender in the middle. The flavor is mild, and not too spicy. Overall, I think this is a good recipe. I like my gingerbread men a tad more "cake like" so I will keep with Eileen's Spicy Gingerbread Men recipe nest time.

Eileen's Spicy Gingerbread Men

Reviewed: Dec. 19, 2008
I had to make adjustments to the recipe based on what I had at home. I used butter instead of margarine, 1/4 cup molasses and 1/4 cup honey, halved the cloves and doubled the cinnamon. The dough was awful to work with! It was very dry and crumbly. I let it chill in the fridge for an hour before working with it, hoping that I could just knead it properly to get it to the right texture. I ended up having to rub a dab of batter in my hands before kneading it to make the dough more pliable. The taste however, is superb! I baked them just until done, then pulled them out to sit on the cookie sheet for 1 min and moved to the cookie wracks after. The flavor is just spicy enough, and the texture is melt in your mouth soft, yet light. I love the flavor! Perhaps when I make it again I will add 1 or 2 T of milk to the dough before chilling.

Oatmeal Peanut Butter Cookies III

Reviewed: Dec. 2, 2008
These aren't close to the girl scout cookies...they are way better! Taking the advice of other reviewers, I doubled the cookie recipe but did not double the filling. First time I made this without the filling as I didn't have powdered sugar. The filling truly makes this cookie! I used 3 tablespoons half and half (I had no heavy cream) and I let it whip and get fluffy and delicious. I prefer softer texture, so I baked the cookies for 8 min, pulled out of oven, remained on cookie sheet for 2-3 min before transfering to cooling racks. Try these, and make the filling! I will keep powdered sugar on hand from now on.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Nov. 20, 2008
I quartered the salt but otherwise kept all the other seasonings the same. I rubbed it into a 4 lb chicken, and wrapped it tightly overnight. I also stuffed the cavity with 1 quartered onion and 3 cloves garlic. I slow roasted as the recipe indicated, except I poured 1/2 cup chicken broth over the bird and brushed the skin w/ melted butter before cooking. When the chicken was done, I poured the drippings into a saucepan, whisked in 1 T flour, and cooked up some delicious gravy. The meat was tender, moist, and falling off the bone!

Quick and Almost-Professional Buttercream Icing

Great texture and super easy to make. I followed the recipe exactly and it was a tad too sweet for me. I will make it again though, and try with a little less sugar.

Quick and Easy Alfredo Sauce

Reviewed: Nov. 12, 2008
The taste was just okay, not breathtaking. I ended up having to add fresh minced garlic, parsley, white pepper, and a pinch of nutmeg to give it more flavor. It needed more parmesan cheese also. I found the texture to be thin and watery. Good base recipe, just needs a lot more tweaking.

Ten Minute Enchilada Sauce

Reviewed: Sep. 18, 2008
Wow! Followed the recipe and used two other reviewers' advice to add a tiny pinch of cinnamon and about 2 ounces of dark chocolate. Man oh Man! This stuff is so tasty and the flavor has true depth to it. Thank you so much for such an easy recipe. Why have I been buying the canned stuff all these years!?

Spaghetti Pie II

Reviewed: Aug. 11, 2008
Does indeed taste like lasagna with a spaghetti twist, as another reviewer mentioned. I used 1/2 lb hot italian sausage and 1/2 lb gr. beef as it was all I had on hand. The only reason I can't give it 5 stars is because the cottage cheese layer tasted like it needed something. My father who is a master chef, suggested spinach. I think the spinach would have completed this dish. Will be making it again! Thanks for the recipe!

Delicious Black Bean Burritos

Reviewed: Jul. 25, 2008
This recipe is terrific! I doubled the recipe and added a little bit of shredded boiled chicken that needed to be used up. I ended up needing 2 more ounces of cream cheese. These burritos are great for something different!

Robbi's M&M Cookies

Reviewed: Jul. 17, 2008
Quick and easy, this recipe satisfied my craving for cookies. I used the miniature candy coated Hershey's kiss candies, as well as butter instead of shortening. I had to utilize what I had on hand. I scaled the recipe down to make 18 cookies and ended up adding an extra tablespoon of flour. I made little mini cookies and they were perfect! They did not taste store bought, nor did they fall flat.

Dutch Babies II

Reviewed: Jun. 20, 2008
I love this recipe! My mother used to make it for me as a kid. I kept trying to make it for days, trying all the techniques discussed in other reviews... eggs in hot water, warmed milk, still FLAT! Suddenly, I realized, the flour in my pantry has been there for a LONG time. Being a beginner cook, I decided to try new flour, that did the trick! Puffy and fabulous! I like mine served with a little butter and warm honey. I also prefer a sprinkling of cinnamon with the nutmeg and a splash of vanilla extract in the batter recipe. So easy and so good!

Southwest Summer Pork Chops

Reviewed: Jun. 15, 2008
I prepared this savory type of spice rub just as the recipe listed, letting the chops sit overnight. When grilling, the flavors smelled amazing! The neighbors were poking their heads over the fence asking what was for dinner. The flavor was wonderful and zesty, however the texture was VERY DRY. Always the one to improvise, I put together a type of "aus jus" style sauce to cut and dip the chops in. It was made from a splash of chicken broth, barbecue sauce, worcestershire, and Red Hot. When we cut the chops and lighty dipped each bite, it made this recipe PERFECT!

Becki's Oven Barbecue Chicken

Good flavor, super easy to make. I did not change anything about the recipe. I would have liked them to have more spice and much more kick, but my husband was content to dip them in hot sauce.

Mom's Best Pork Chops

The pork chops did not come out dry, however they had no flavor. I made the recipe exactly as indicated, I'm not sure what I could have done to give the chops more flavor.

Creamy Rice Pudding

Reviewed: Jun. 2, 2008
This was just what I needed! I was craving rice pudding and was glad to be able to use what I had on hand. I cooked it exactly like the recipe, except I added two tiny sprinkles of cinnamon. I also had to substitute veg. oil spread instead of butter, but it still tasted delicious. I will never buy rice pudding again! Thanks for the great recipe.

Artichoke Chicken

Reviewed: May 22, 2008
This recipe was easy and so flavorful! I had to make a few changes based on what I had on hand...1 pinch garlic powder instead of garlic pepper,a dash of garlic & herb flavor "Mrs. Dash", light mayonnaise, and marinated artichoke hearts. I stirred in 1 teaspoon of the artichoke oil from the jar just to get it to spread easier. I'm glad I did not add any salt, as it would have been way too salty! I also pounded the chicken nice and thin, it cooked fast and was tender. I will make this again! Thanks so much

Mountain Dew™ Cake

Reviewed: May 9, 2008
I've been making this for years! This cake always comes out perfectly moist, tastes like its from scratch entirely. My husband is obsessed with mountain dew-but allergic to coconut. I make the cake as the recipe indicates and I use store bought lemon icing. Thank you so much for the great recipe!

Classic Spanish Sangria

Went through 2 pitchers of this stuff for 4 drinkers! It was wonderful and refreshing. It is so important to let the fruit marinate in the rum and sugar for at least 2 hours. My second batch was much better. Thanks for the great recipe!
