Slow Cooker Enchiladas

This was very easy and very good, though I added a few extra things, including a can of black beans and a can of dices tomatoes. You need to double layer the tortillas - I did not and they were almost non-existent. I also added onions and garlic to the beef while browning.

Caramelized Baked Chicken

This was easy and fantastic! I used boneless skinless breasts and wasn't too worried about the "stickiness" so the sauce was a little thin... but we just sopped it up like bbq sauce! I will make this again!

Salmon With Scalloped Sweet Potatoes

This was fantastic! My husband and I are not big on fish at all, but in trying to spice up our dinner menu I thought I would try this. I added garlic and had to use sage powder. I had to cook the salmon an extra 10 minutes due to the size I bought. Even the kids loved it. I will be maiking this again - it's even guest worthy!

Parmesan Chicken I

This was soooo yummy! Hubby and kids loved it! So easy to make. I cooked the rice seperately since other people said it got soggy and only cooked the chicken on low for 4 hours. It came out perfect. I also added some sour cream and used a little less onion soup mix, since others said it was a bit much. I will make this again and again!

Ten Minute Enchilada Sauce

This was so easy and yummy! Tasted like the sauce in the restaurants! I didn’t have self-rising flour so I used regular flour and added a tablespoon of cornstarch once it was bubbling to thicken it up. I will never buy the packaged sauce again!

Best Big, Fat, Chewy Chocolate Chip Cookie

This is by far the best cookie I have ever made. I have always had issues making chocolate chip cookies; never able to get them quite right, but these came out PERFECT!! Seeing other peoples’ comments, I added ½ teaspoon of baking powder and a ¼ cup of rolled oats. If you are used to a sweeter cookie you may want to ad a ½ cup extra sugar or use pure chocolate chips. I thought they were perfect as-is but my hubby wanted them a little sweeter. I will make these again and again!

Zesty Slow Cooker Chicken Barbecue

I STRONGLY suggest ensuring that you like the bbq sauce and dressing before you try this. I made a mistake and tried a new sauce that none of us liked, so it ruined the dish. It would have been wonderful, though so I will try again! I shredded the chicken, also and put it on buns. So easy and could have been so good. It cooks quicker than you think, so make sure you don't dry it out!

Ground Beef Stroganoff

This was yummy! I omitted the beef broth and used condensed cream of mushroom soup instead of just mushrooms. (I like my stroganoff thick!) I also added extra garlic powder and some basil. We ate leftovers for lunch the next day! Even my husband liked it!

Mexican Layered Dip

I had never made a layered dip before **gasp** and this was quick, easy, and fun to make. I received rave reviews and everyone liked my dip the best at the party. I made my guacamole from scratch just by adding garlic salt to the mashed avocado. YUMMY!
