Pollo Fajitas

I wasn't sure about the ingredients, but this was actually quite good. I was missing some flavor, but I think that's mostly because I should have let it marinate longer than 30 minutes, and I forgot the lemon juice at the end. I'll try those next time, and that may tip it from pretty good to great. I used 1 lb chicken and removed from skillet to cook the veggies (1 red+1 green pepper + 1 onion), and tossed the chicken back in at the end - the amount of sauce was perfect.

Garlic Asparagus with Lime

Pretty good. I didn't have shallot or onion, and I just tossed the garlic and asparagus into the butter/olive oil mixture at the same time. My garlic got a little burned before the asparagus was done. I added dried minced onion near the end, finished with the salt/pepper and lime juice, and topped with toasted cashews. I like the pan-fried asparagus taste, so some version of this will definitely go into my regular rotation.

Pumpkin Waffles with Apple Cider Syrup

Tasty and unique! The apple cider syrup was amazing, although I might cut the sugar next time as it was too sweet for my taste. And it thickened so quickly! I was less impressed by the waffles; the pumpkin flavor didn't really come through. Mine were a little dense (probably I didn't whip the egg whites enough) and didn't crisp up even though I left them in longer than normal.

Pumpkin Bean Soup

This is really yummy! I followed the recipe exactly, using sour cream as the garnish, and I found the spices just right. I definitely recommend adding the sour cream, it's the perfect extra flavor.

Parmesan Sage Pork Chops

These were ok. I used 3/4 cup panko bread crumbs, I guess that's not the same as soft bread crumbs? It was way too much breading even for 3 chops, and the parmesan/sage didn't come through. In the end it was more like a chicken-fried steak, and it could have used some gravy. Also took about 20 mins to cook. At least it was nice and moist!

Bada Bing Bada Banged Potatoes

Pretty good, a bit much on the seasoning for my taste. If I make again, I'll probably leave out the oregano and rosemary at least. I used yellow potatoes, quartered, gently smashed them before tossing with the butter/olive oil/spice mixture, and it worked well.

Acorn Squash with Apple

Thanks for the tip on peeling the squash! Worked like a charm, except for the tail of the squash which refused to stay underwater. As for the recipe, it was ok, sweet more like a dessert than a side. And it actually tasted much better the next day, after the flavors had melded more. Right out of the microwave it tasted strongly like squash, with little apple flavor.

Black Bean and Corn Quesadillas

It was ok. I went light on the brown sugar, but the salsa I used was also a little sweet and the whole thing came out too sweet for me. I added cumin to try and balance it, but still not right. I think this could be very good but it would take some work to figure out the right seasonings.

This is a fantastic recipe! I love the flavor. I usually end up adding a little more white wine half way through so that there's more sauce left at the end. Otherwise, I don't change a thing.

Glazed Apple Cookies

These are delicious and cake-y. I used half butter/half shortening and left out the raisins. I forgot the milk in the batter; I drizzled some in for the very last tray. The ones without milk taste the same, but they didn't rise at all. The ones with milk look exactly like the photo! I also made my glaze fairly runny so I could just dollop it on instead of spreading. I'd definitely make them again.

Cauliflower Gratin

I'm not a fan of cauliflower, and this was a great way to dress it up! It actually tasted very similar to potatoes au gratin. I had to sub mozzarella for the Swiss and bacon bits for real bacon; I hope to try it sometime with the right ingredients.

Carrots in Dill Butter

Very tasty... I'm not usually a fan of cooked carrots, but the butter+dill really meshed perfectly. Not all of the water was absorbed by the time the carrots were done, but it didn't seem to affect the taste.

Valentino's Pizza Crust

I was looking for a quick pizza crust, but I'll keep looking. This was super sticky, hard to handle, and it tasted like biscuits - hardened crust on the bottom (but didn't get crispy) and fluffy on top. Not good for pizza.

Peach Muffins

Yum! I used 3 ripe peaches chopped, subbed brown sugar for 1 cup of the white, applesauce for half of the oil, and baked it as two loaves of bread. The peach flavor is subtle, but I like the chunks of fruit in the bread. Good way to use up ripe peaches, if you like breakfast breads/muffins! And I had no problem with mine being dry.

Sauteed Green Beans

Pretty darn good... hard to go wrong with bacon! I used fresh green beans, and I wish I'd blanched them first. They didn't soak up much flavor. However, I saved it by tossing in diced eggplant - THAT really soaked up the flavor! I put the almonds (I used whole instead of slivered) in with the bacon when it was almost done, and pulled them out at the same time as the bacon - they were a little burnt-tasting, so next time I might cook them separately after the bacon's done.

Roasted Garlic Zucchini and Tomatoes

Pretty good, and the red pepper gives it a nice kick! I forgot the parmesan and basil the first time I served it, but remembered with the leftovers, and that definitely adds to the yumminess.
