I took some of the other reviewer's advice, and the result was perfect. I used ~2 cups apples, one cup shredded and one diced. I used 1/2cup white sugar and 1/2cup brown, added the brown sugar to the apples to bring out more juice and creamed the butter with the white sugar. Also I added 1 tsp cinnamon and 1/2 tsp nutmeg to the dry ingredients before mixing. The crumb topping I didn't change. The batter was thick, but the muffins turned out moist and delicious. The cooking time was spot on too, at 20 mins they had a nice little crumb on my tester toothpick. Almost more like a cupcake than a muffin, but a big hit at the brunch I brought them to.
