Potato Arugula Salad

I was actually surprised by how much I liked this salad! It's definitely a different take on potato salad. I probably didn't use the full amount of arugula, but I liked the balance of flavors with what I did use.

World's Best Lasagna

LOVE this recipe. It's very customizable too; I usually make a three-layer lasagna, I always use shredded mozzarella instead of slices, and I love add-ins like mushrooms for the meat sauce. Making your own sauce does take extra time and honestly you could use canned sauce and get a perfectly good result. But it's not that hard to get it on the stove and check it occasionally if I'm doing other chores around the kitchen anyway. It's important to use the sweet Italian sausage to get the best flavor. I hate pre-boiling the noodles, so I usually either soak the noodles in hot tap water for a few minutes or don't cook them at all, leave the sauce a little watery, then build the lasagna and stick it in the fridge overnight for the noodles to absorb moisture and soften up. Then I cook it for dinner the next day!

Green Beans With Orange Olive Oil

I tried this first with asparagus, and later with green beans as I had a lot of oil left over. The oil had a subtle orange smell, but the flavor really didn't come through on the veggies. You definitely need the orange zest to get the orange flavor. And even then it was just a little too orange-y without any balancing flavor. Not bad, but I won't make it often.

Applesauce Pork Chops

I was looking specifically for a recipe with pork and apples to mimic something I had in a restaurant once as a kid, and this came pretty close! I used unsweetened applesauce and a Macintosh apple. The only mistake I made was tossing in a sliced green pepper that needed to get used; that changed the flavor more than I expected, so next time I'll just follow the recipe. It was a little sweet but pretty tasty!

Wine Cookies (Original Italian)

It's a good way to use up leftover red wine. I used a sort-of fruity merlot, and as another reviewer suggested I mixed the oil in first, then added the wine, and refridgerated for a few minutes to make the dough easier to handle. I rolled in sugar the same way I would a snickerdoodle and baked on a Silipat. The bottoms were browned but no sticking or burnt sugar. The taste is subtle, a little wine flavor, a little yeasty-tasting, and definitely not sweet, even with the sugar on the outside. It is nice as a snack with tea, but I'd only make these if I had leftover wine!

Pesto Tomatoes

Flavor-wise, these were delicious - and a great way to use the abundance of tomatoes and basil we have right now! I must have overcooked the tomato, I left it in for 15 mins and when it came out it was so soft it disintegrated when you cut into it. Or maybe I used a tomato that was too ripe. My boyfriend said he would have preferred the tomato to be sliced thick and baked with a little pesto and mozzarella on top, so I may try that instead next time.

Country Green Beans

I made this as written b/c I was short on time and kitchen space. As is, it was tasty but way too salty and fatty. I used 3 pieces of bacon, which was about double what I needed! Next time I'll use 1-1.5 pieces. Next time I'll also follow what other reviewers did, and saute the onions, garlic, and green beans in the bacon pan with a pat of butter (not half a stick!) before adding the broth and simmering. The onion/garlic flavor was completely missing this time. And for my taste I'll cut the salt in half.

Refreshing Cucumber Salad

This was really unique and refreshing! It's best served cold. As another reviewer suggested, I marinated the cuc+onion in the vinegar and salt for about an hour, then drained and added the other ingredients. After letting them sit together for a couple more hours, I actually transferred the veggies to another bowl for serving, leaving behind a lot of the liquid. Still had great flavor but without the runny mess!

Veronica's Apple Pancakes

These were a nice change from regular pancakes. The shredded apples gave a bit of crunch/texture to the pancake that was unique. I warmed maple syrup with a cinnamon stick to use over them, which was great, but a little more cinnamon in the batter would have helped the flavor. The batter is thicker than I'm used to for pancakes but the texture was good.

Jalapeno Margaritas

Not bad! Next time I'd muddle the jalapeno a bit to get more of the spicy flavor. Also I didn't have agave nectar, so I subbed Rose's sweetened lime juice; but I think it'd be better with the agave nectar+lime juice. It's definitely a strong margarita!

The Best Lemon Bars

LOVE these lemon bars. I've made them twice now. The combination of gooey lemon filling and sweet hard crust is perfect. I do add some freshly grated nutmeg to the crust mix. For a half-recipe, I use the juice from 2 small-ish lemons and the zest from one (I love lemon!)

Refreshing Watermelon Salad from ATHENOS

This is a really unique and tasty simple salad. I used straight balsamic vinegar since I didn't have a vinaigrette dressing, and it was good, not overpowering at all. It was pretty popular at our BBQ.

Lemon Bread

This was pretty good. I used the zest from 2 small lemons in the bread, and used the juice of about 1.5 small lemons for the glaze (I tasted the glaze while adding the juice to decide when to stop). I also left out the nuts and added poppyseeds instead, which was delicious. It's a very thick batter, and it goes from "not done" to "over-done" very quickly, so watch it! For my oven it took about 45 mins and it was already starting to dry out a bit. But the glaze really gave it back that moisture.

Cranberry and Cilantro Quinoa Salad

I just didn't care for the flavors here. I cooked the quinoa in chicken broth not water, and I didn't have fresh cilantro so I sprinkled in some dried. Other than that I followed the recipe. But all I tasted was the curry powder, it was overpowering and one-dimensional. I ended up throwing it away.

White Chip Orange Cookies

Delicious. I did make a few changes - added 1/2 tsp vanilla, added about 1/2 cup chopped macadamia nuts and reduced white choc chips to 1.5 cups. They're like a white choc macadamia nut cookie... but with a little hint of orange that makes them outstanding. I might make these instead of my usual white choc macadamia nut cookie from now on! I used the zest from one medium-size orange, didn't measure it out exactly.

Slow Cooker Cilantro Lime Chicken

I love this recipe! It's so easy and tasty, my two favorites :) I have a tiny crock pot, so I just use one chicken breast and eyeball the ingredients. It cooks perfectly in 4 hrs. I've tried different salsas, and in the future I'll probably play with the seasonings too. I use the shredded meat for chicken tacos/burritos; it's delicious, tender and juicy.

Chef John's Asparagus Souffle

Not sure what happened, we've made souffles before. But this one fell drastically, and the texture wasn't right - kind of mushy. We tried baking one longer but that didn't firm it up. The flavor wasn't good either - very bland, should have added salt and more garlic. The egg and asparagus didn't complement each other at all. Won't try this again.
