Strawberry-Gin Cocktail

This is pretty good, the flavors really work well together. I'm curious to try it with the mint. I don't love the flavor of gin, so it won't become my favorite drink, but it's definitely one to pull out on a summer day when you have strawberries and basil on hand.

Warm Dijon Potato Salad

Loved the unique combination of flavors in this dish! I used chives since I didn't have green onions on hand, and cut the cayenne in half for fear it would be too spicy - but I could have put more in. It was delicious! Will definitely make for my next BBQ.

Lemon Basil Grilled Chicken

Pretty good marinade. I only marinated for 30 mins, so the lemon flavor wasn't overpowering - actually it barely came through, so marinating for 1-2 hrs is probably better.

Taco Seasoning (without the chili powder)

This was pretty good, a little too salty for my taste. Next time I'll cut the salt to 1 tsp. I love being able to make a good taco seasoning from my spice rack, so thanks for the recipe!

Salmon with Lemon and Dill

Pretty good, kind of plain-tasting. I was only making two fillets so I didn't measure anything, just mixed in what looked like the right amount. As some other reviewers recommended, I baked the fish in separate foil packets. This worked, but my thinner fillet ended up overcooked and chewy - hard to tell when it's done if you have to open a packet to check. So I'm not sure I liked this method, if I make it again I'll just try a baking pan.

Salmon with Tomatoes

Wow, this was delicious! I used a can of diced tomatoes instead of fresh tomatoes; it created a sauce which was perfect over brown rice. There was a bit too much sauce for 2 salmon fillets, would have been perfect for 3.

Pork Chops with Apple Cider Glaze

This was really tasty. As others mentioned, the sauce takes at least 20 minutes to reduce, even at a rolling boil. The sauce by itself tasted very sweet, but over the pork it was perfect.

Beef and Guinness® Stew

This smelled great while it was cooking, but I found the broth too thin and the flavor too salty for my taste. I did substitute beef broth for the chicken broth, maybe that's saltier? I'll definitely try it again, it's a great and hearty stew that really fills you up! But next time I'll cut down on the salt and for that last 20 mins of cooking I'll stir in a cornstarch/water mixture to help thicken it up. The stew went really well with a basic beer bread.

Oregon Salmon Patties

I enjoyed these although my boyfriend thought they were too plain and needed a creamy sauce. I used smoked salmon instead of canned, so I just eyeballed the breadcrumbs and added water to the consistency I wanted. Also tossed in some extra seasonings: fresh dill, garlic powder, pepper.

Kale and Feta Salad

This was pretty good, I was skeptical but massaging the kale did break it down. I was making a salad for one so I didn't measure anything, just sprinkled on whatever seemed right, and I had to substitute dried cranberries for currants. But it was a nice, different lunch.

Delightful Apple Spice Muffins

Delicious! Great spice and flavor. The only changes I made were minor - butter instead of margarine, add a splash of vanilla, use a mix of AP/whole wheat flour and white/brown sugar. I just greased a muffin pan and these made 12 large muffins. The texture is very moist and light; actually next time I'll try only 1 tsp baking powder because I wanted them a little denser. But they just smell and taste amazing!

Baked Coconut Shrimp

Really delicious. The result was a little sweet, but if I'd been able to make the orange marmalade sauce other reviewers recommend, it would have been perfect. Next time! I did use one whole egg instead of egg whites. I love how perfectly cooked the shrimp were, I've never baked shrimp before! Great party appetizer.

Costas French Market Doughnuts (Beignets)

Yum! perfect easy donut substitute. I did have problems keeping the oil the right temp; it started too hot and they browned too fast without puffing up. Better to err on the side of too cold and let them cook a bit longer. The dough is so easy to make, but it does make a ton! I cut the recipe in half, and one baseball-sized amount made about 18, which was enough for the 6 adults+2 kids brunch I brought them to. I thought they were great as is, but I can see how adding on cinnamon or pumpkin pie spice could make it even better!

Sweet Potato and Black Bean Chili

This was so good. I don't normally like sweet potatoes and was looking for a way to use some up; my boyfriend couldn't believe I served him a meal without meat but even he admitted it was "decent." I didn't have ancho chile powder so left it out, I added more cayenne because it did need a bit more spice.

This was delicious! Although I made a few mods - I used rotini pasta instead of linguine. And I used andouille sausage instead of plain ol' keilbasa. I didn't add the hot sauce, with the Cajun seasoning and sausage it was perfectly spicy for us. And so flavorful! I served it to company and they loved it.

Absolutely Ultimate Potato Soup

Yum! This is definitely a good potato soup base to build on. I found it to be quite flavorful as written, although I didn't have tarragon so substituted a mix of fennel seed, ground marjoram, rosemary, and oregano. I also added carrots to the veggies, and I used an immersion blender (love that thing!) to blend it without mess. I did need more than 1 cup of liquid to make the cream sauce. I used 1 cup heavy cream and the roux was still very solid, so I thinned with milk (prob another 1/2 cup) until it was a nice sauce. And it only took me about 1 hr start to finish, even with chopping veggies.

Pecan Pie V

This was good. Without the corn syrup it wasn't too sweet and you could actually taste the pecans! The only thing I would change next time is to use a sweet/spiced dessert pie crust. I just used a regular pie crust, and the combination of the two wasn't sweet enough.
