Oregon Salmon Patties

I enjoyed these although my boyfriend thought they were too plain and needed a creamy sauce. I used smoked salmon instead of canned, so I just eyeballed the breadcrumbs and added water to the consistency I wanted. Also tossed in some extra seasonings: fresh dill, garlic powder, pepper.

Kale and Feta Salad

This was pretty good, I was skeptical but massaging the kale did break it down. I was making a salad for one so I didn't measure anything, just sprinkled on whatever seemed right, and I had to substitute dried cranberries for currants. But it was a nice, different lunch.

Lemon Basil Grilled Chicken

I saw many reviewers said the lemon was too strong, so I decided to leave out the zest. I also added some black pepper, but otherwise made the marinade according to recipe. I marinated about 1.5 hrs then grilled. The basil definitely came through, but the lemon flavor was weak, and it could have used more salt. I may try it again with more modifications.

Delightful Apple Spice Muffins

Delicious! Great spice and flavor. The only changes I made were minor - butter instead of margarine, add a splash of vanilla, use a mix of AP/whole wheat flour and white/brown sugar. I just greased a muffin pan and these made 12 large muffins. The texture is very moist and light; actually next time I'll try only 1 tsp baking powder because I wanted them a little denser. But they just smell and taste amazing!

Maple-Brined Pork Loin

This was amazing. I did cut the salt in half for the brine. I also forgot to add the dijon-maple sauce during cooking, so I served it on the side, which worked great.

Salmon with Dill

This didn't work well with salmon steaks. I think there wasn't enough surface area for the seasoning to stick to. It would be much better with fillets.

Baked Coconut Shrimp

Really delicious. The result was a little sweet, but if I'd been able to make the orange marmalade sauce other reviewers recommend, it would have been perfect. Next time! I did use one whole egg instead of egg whites. I love how perfectly cooked the shrimp were, I've never baked shrimp before! Great party appetizer.

Costas French Market Doughnuts (Beignets)

Yum! perfect easy donut substitute. I did have problems keeping the oil the right temp; it started too hot and they browned too fast without puffing up. Better to err on the side of too cold and let them cook a bit longer. The dough is so easy to make, but it does make a ton! I cut the recipe in half, and one baseball-sized amount made about 18, which was enough for the 6 adults+2 kids brunch I brought them to. I thought they were great as is, but I can see how adding on cinnamon or pumpkin pie spice could make it even better!

Sweet Potato and Black Bean Chili

This was so good. I don't normally like sweet potatoes and was looking for a way to use some up; my boyfriend couldn't believe I served him a meal without meat but even he admitted it was "decent." I didn't have ancho chile powder so left it out, I added more cayenne because it did need a bit more spice.

This was delicious! Although I made a few mods - I used rotini pasta instead of linguine. And I used andouille sausage instead of plain ol' keilbasa. I didn't add the hot sauce, with the Cajun seasoning and sausage it was perfectly spicy for us. And so flavorful! I served it to company and they loved it.

Absolutely Ultimate Potato Soup

Yum! This is definitely a good potato soup base to build on. I found it to be quite flavorful as written, although I didn't have tarragon so substituted a mix of fennel seed, ground marjoram, rosemary, and oregano. I also added carrots to the veggies, and I used an immersion blender (love that thing!) to blend it without mess. I did need more than 1 cup of liquid to make the cream sauce. I used 1 cup heavy cream and the roux was still very solid, so I thinned with milk (prob another 1/2 cup) until it was a nice sauce. And it only took me about 1 hr start to finish, even with chopping veggies.

Pecan Pie V

This was good. Without the corn syrup it wasn't too sweet and you could actually taste the pecans! The only thing I would change next time is to use a sweet/spiced dessert pie crust. I just used a regular pie crust, and the combination of the two wasn't sweet enough.

Pear and Blue Cheese Salad

This is fantastic! I made everything as listed; the dressing was just perfect. I brought it to a dinner party and it was the dish everyone commented on. As others said, for this size salad you only need about half the dressing the recipe makes.

Ginger Veggie Stir-Fry

I'm rating the sauce, since I used a bag of frozen stir-fry veggies and tossed in shrimp too. The sauce is a really good base to adjust to your own taste. I cut the ginger in half since I only had powdered ginger; I'd like to try it again with ginger root. I also left out the salt b/c soy sauce adds enough salt for me. I added a couple drops of sesame oil too. It was a really pleasant, mild sauce, which I'll definitely use again and tweak in the future. Thanks for the recipe!

Banana Crumb Muffins

It might not be fair to rate given the number of mods I made... but this recipe was a great base to start from. The end result was a moist, delicious muffin with banana flavor, great crumb, and crunch on top. Changes to the batter: canola oil instead of melted butter, add 1 tsp vanilla, use 1/4 c brown sugar and 1/2 c white, add 1/2 tsp cinnamon and 1/4 tsp nutmeg to the dry ingredients. For the topping I just used finely chopped pecans and granola, which toasted beautifully in the oven. Next time I'll press the topping down into the batter a little, it didn't sink in by itself so it falls off when you pick up the muffin. Thanks so much for the ideas!

Real Italian Calzones

Not bad, although I mostly just followed the dough recipe. The dough came out of my bread-maker extremely sticky; I use olive oil on my hands and counter-top surface and pressed the dough into a rough circle with my hands. For the filling I used only ricotta cheese, seasoned with salt+pepper+dried basil, then sprinkled on chopped mushrooms and peppers and laid on slices of pepperoni. The bread did cook up beautifully, browning nicely under the egg wash, and with great texture. The filling wasn't impressive, nor was it enough for this much bread, so that needs work!

Zucchini and Potato Bake

This was an interesting change, and a good way to use up some sliced veggies left over from a BBQ. My biggest complaint is that everything else cooks faster than the potatoes, so at 1 hr I had perfectly cooked potatoes but burned peppers and onions. Next time I'll either slice the potatoes instead of quartering them so they'll cook faster, or pre-cook the potatoes in the microwave or boiling water so everything will be done in 30 mins.

Quinoa Pilaf with Shredded Chicken

This was interesting; it reminded me of Thanksgiving, but my chicken broth was also infused with rosemary, thyme, and white wine, so that might be part of it. I had to tweak with what I had on hand, so I used olive oil, left out the celery and sage. I used it as a side for grilled chicken, so I didn't add any chicken. Overall I found the variety of flavors overwhelming (but again that might be due to the fancy chicken broth), and I prefer my Mediterranean-style quinoa salad (cucumbers, tomatoes, olives, and feta with a red wine vinegar dressing).
