Chocolate Pudding Fudge Cake

Reviewed: Dec. 23, 2003
Eh, to me this was just an average, regular chocolate cake. It is a little denser than regular cakes & the chips are a nice addition, but it's nothing to write home about. If you need just a plain chocolate cake, this is a good recipe, but if you need something special, keep looking. In all likelihood, I won't be making this again.

Hot Cocoa Mix in a Jar

Reviewed: Dec. 23, 2003
Yummy!!!! This hot chocolate mix is THE BEST. It tastes like the hot chocolate that you get in the gourmet coffee shops. It's really rich & creamy. We used whole milk instead of water. I think next time I'll try it with 2% milk, as the whole milk was almost too creamy (but still delicious). I used Ghiradelli (however you spell it) unsweetened cocoa powder. I also used French Vanilla non-dair creamer instead of plain. I put the mix in mason jars, decorated them with ribbon, & dipped spoons in melted white chocolate. I'm giving sets to all the adults in the family since we only get presents for the kids. Just an FYI, I used pint jars (that's all the craft store had, so everyone will get 2 jars). This mix makes 4 pint jars with enough for about 1/4 - 1/2 jar left over. I made 12 jars & used 3 batches & probably could have made 2 more jars with what was left over.

German Apple Cake I

Reviewed: Dec. 9, 2003
I made this for a holiday luncheon at my work. Like one other reviewer suggested, I only used 1/2 cup of oil, and replaced the other 1/2 cup with orange juice. Good thing I did because I had to make this the night before, & the next morning it was pretty dense. I think if I had used a whole cup of oil, it would have been a big gushy lump by the next day. Also, some things I messed up on were that I forgot to add the baking soda, and I mistook the 4 cups of apples for 4 WHOLE apples, which was a whole lotta apples. I added all but a handful. So my cake wound up being more like apple pie without the crust. That wasn't so bad though, because I like a lot of apples in my pies. Regardless of everything, this cake was VERY YUMMY. I did have to bake it just shy of 1 hour, but maybe that was because I added to many apples. My husband who isn't a cake eater loved it & asked that I make one for home. My 18 month old son (the only fruit he eats is watermelon & blueberries) ate up a whole piece. And everyone at work loved it. Someone even asked me for the recipe. This would probably be scrumptious warmed up & topped with a big scoop of vanilla ice cream.

Chocolate Torte

Reviewed: Jan. 2, 2002
I have but 3 words for this recipe...Yum, Yum, & YUM!! This was soooo good! I made it for Christmas & it got rave reviews. It tastes like a desert you'd get at a restaurant, yet it is so incredible easy to make. The filling is just delicious! The only thing I would do differently is that I would make double the amount of filling, as it would have been nice to use it as frosting for the outside of the cake for a finished look. My grandmother doesn't particularly like chocolate, so I'm going to try this recipe with a yellow cake, and maybe some sliced strawberries & bananas layered with the filling. Thanks Erika!

Irish Cream Chocolate Cheesecake

Reviewed: Jun. 11, 2001
This was soooooo yummy!! I made this two days ago for a family dinner & it was the first time I'd ever made cheesecake. I was amazed at how easy it is to make. Everyone really loved it & actually asked to take some home, which never happens. I followed everyone's advice & added 1/3 cup Bailey's & it was just the right amount. I couldn't find cookie crumbs for the crust though, so I used chocolate Nilla wafers that I ground in the food processor. It worked really well. I have a piece left in the fridge & can't wait to get home to eat it.

Cheddar Chicken

Reviewed: May 24, 2001
Made this last night. My husband loved it, I thought it was a little bland. I think next time I'm going to add some chili powder and save some of the extra cheese/corn flakes & put it on half way through the cooking, so that there's a little moisture left in the cheese when it's done. Overall though, it was a quick & easy recipe & I'll most likely make it again.
