Quick Black Bean Soup

I would have given it 5 stars - it is delicious - but I wished that the ingredients were listed better. I saw 2 cans of beans and as I followed the recipe I got down to another can needed (luckily I did not have to run out as I had one more). It would have been so much easier to list 3 cans in the beginning. Also I added some oregano and more cumin. Really good!

Pollo Fajitas

It is an interesting marinade. Not bad. Not Mexican! Soy sauce and Wocestershire are not staples in the Mexican kitchen ( I haven't actually been in one, but I think the Senoritas will back me up on this one). Lime juice, Cumin,(even Red wine vinegar might be acceptable). No, not my Fajitas! You could call them FaHahas though. Just to differentiate.

Tex-Mex Turkey Soup

It really is a luscious soup. But I highly recommend against adding the sour cream and cooking for 30 minutes. It just curdles. Add it at the end if you choose a more mellow flavor.

Tender Italian Baked Chicken

Wow! I really think the secret is the mayo. Moist is the keyword (and no brining)! I also used the cookie rack. Any flavors can be added to the crumbs, but the timing and temp were perfect. Thank you for the only way I'll bake breasts from now on.

Black Beans with Pico de Gallo

Excellent! I changed nothing. This one's a keeper! I served it with Zatarain's Mexican Rice on the side. The Pico de Gallo is great with that too. Thank you for a lovely addition to my recipe box.

Kai Kang Dang (Chicken Curry with Coconut Milk)

This is a wonderful and authentic recipe, my husband and I loved it! I followed the recipe pretty closely. I only used one can of coconut milk (which comes out to 2 cups) and half the curry paste. However, when I make this again I will use the full amount of curry paste but 2 tblsp. of fish sauce is adequate. Everything else is fine.

Cranberry Martini

This is excellent! I'm not a fancy cocktail person, I pretty much stick to my extra dry vodka martini, but it looked interesting. Just the right amount of everything and a gentle sweetness. My Christmas guests are getting this.

Vietnamese Golden Chicken Wings

When I chose this recipe there were 3 reviews and all gave it 5 stars. I followed the recipe precisely because of the glowing reviews. Whoa! SALTY!! Nice flavors but soy sauce, fish sauce and salt? I will make it again, no tsp. salt and I will add 1 more tblsp. sugar and perhaps some heat. (Excuse me, I have to go check my blood pressure.).
