High Temperature Eye-of-Round Roast

Won't do this again... roast came out tougher than if I'd just roasted it at 350 like I usually do - and having the fire alarm going off every 2 minutes during the high heat faze... I'm sure the other tenants in this building are ready to kill me.

Herman Biscuits

great recipe... and so easy! I line the baking sheet with parchment paper 1st and don't even have to wash the sheet... I do find that if you are rolling them out, you need to add about 1/4 - 1/3 cup more flour... I've never tried these with whole wheat flour, but I think I will next time

Rhubarb Stir Cake

WOW this is so good! I've made this last summer and the summer before, and I'm waiting (impatiently) for the weather to warm up to the point where the rhubarb is growing again. this is undoubtedly one of my favourite dessert recipes ever. Normally I make it as writen with 2 substitutions... oil instead of butter (no pesky trans fats!) and non-fat yogurt instead of sour cream. I have on ocasion used other fruits... it works well with blueberries, raspberries or strawberries, and I am thinking of trying is with Bananas or grated carrot.

Rita's Spinach Casserole

I doubled up on this recipe and gave 1 pan to a friend... and we were surprised at how good it was! I used low fat yogurt instead of sour cream, and grated nacho cheese blend instead of mozzerella... but it was absolutely amazing! I'd suggest mixing all the ingredients except the cheese together too... then pour it in a dish sprinkle the cheese on and bake until the cheese is pretty =)

Tuna Salad Muffins

these were pretty good - and I hate canned tuna and olives. My only complaint about them is that they don't brown hardly at all. I'll try making them for a potluck tomorrow and see what the reactions are then.

Sweet Dinner Rolls

WONDERFUL RECIPE! and very versatile too! I made it 3 times so far - and once was for a church potluck - people loved it! I changed a few things... oil instead of butter, and 1 cup milk instead of 1/2 water... I also found the dough too dry at 1st so added about 1/3cup water. I used 2tsp bread machine yeast instead of the packet... a lot cheaper. I also didn't use that last bit of butter for brushing on top. This recipe is EASILY adapted to whole wheat.. one of the times I substituted 3 3/4 cup whole wheat flour and 1 tbsp vital wheat gluten flour... This will be my basic bread recipe from now on.

Lickin' Good Rabbit

I made this with a snowshoe hare... it wasn't bad... it was certainly edible... but there was nothing SPECIAL about it. in fact, I think it was on a par with rabbit that's just slow-roasted with no spicing preparation. I found it rather bland. Don't think I'll make it again.
