Fajita Marinade I

Followed exactly except for when I realized I was out of liquid smoke. This is so delicious! I used a 1.75lb skirt steak and 1lb uncooked, frozen shrimp. If I used those quantities again, I may make another half batch of the marinade so everything is generously covered. It was wonderful the way it was though! Thank you!

Irish Bananas

Quick Pickled Eggs and Beets

I am so happy I found this recipe. I will be making pickled eggs exactly like this forever. DO NOT forget the cinnamon - it gives them a great taste. My 2nd favorite thing about this recipe was how you cook the eggs - perfection. Regular hard boiling makes them dry, but these are sooo moist.The shells are a little hard to seperate from the egg but it is worth the extra effort, believe me. Just make sure you cool them for awhile before peeling. Oh yeah, and I doubled the batch and it wasn't enough. They were the first thing gone on the table. Beets were great too. Make lots. YUM!

Mom's Zucchini Bread

Great recipe, I am sure the way it is written would have been A+. However, I am watching our fat and sugar intake, and made some changes: Bring the vegetable oil from 1 cup to 1 Tablespoon (kept a small amount so I didn't mess up the consistency too much). Add 1 cup unsweetened apple sauce in its place. Also reduce sugar from 2 1/4 cups to 1 cup sugar + 1/2 cup light agave nectar. Still dense, moist and super sweet! You could probably cut back more on the sugar if you desire, I will try next time. I also put one loaf right into the freezer when it cooled so my family doesn't eat both tonight! So delicious!

Black Bottom Cupcakes I

Yum! Came out perfectly and cake is tasty as well as cream cheese. I yielded 21 cupcakes. I let them cool a bit and put them in the fridge and they are fabulous! I made two modifications for what I had on hand: regular white vinegar and milk chocolate chips, about half a bag. I will make again, probably sooner than later.

Scalloped Corn and Broccoli

I doubled the shredded cheese. I would use a little less sugar next time since the creamed corn already has a sweet taste. My family enjoyed this different side dish and is already asking when I will make it again.

Restaurant-Style Chicken Scampi

Needed quite a bit of "doctoring" - definately needs ALOT more garlic. I also added about 1 cup of grated romano cheese (from the block) and it really helped add to dullness of the jarred alfredo sauce. I will make again and experiment with more spices and homemade Alfredo sauce.

Braised Balsamic Chicken

I think it was smelling/looking great, and then the addition of the dry spices overpowered it. There is already a lot of flavor going on with the balsamic and the tomatoes, perhaps scale the spices back or opt for fresh?

Awesome Egg Rolls

I didn't enjoy these at all. They are a mess to make! When the oil finds its way inside the roll there is a geyser in your fryer! I think eggroll making is best done at my favorite Chinese restaurant, and it's worth the $1.10 to purchase! I give this ** - 1 because it looked like an eggroll 1 because the hubby ate them!
