Poor Man's Caviar

I was feeling a little creative and decided to serve this as a "salad" to go with a Mexican dish . It was fantastic. I added one chopped red bell pepper and used frozen corn but everything else was the same.

Best Black Beans

I thought these were just ok. More colantro may help but these beans just tasted like beans from a can to me.

This was one of the best recipies I have ever made. My husband thought it tasted like a "dairy farm" but agreed that it was exceptional. And yes, it is extremely fattening (although this really does end up being more than 4 servings). A few things: I don't undertand why it says to cook the chicken for 30 mins...I think the adding watert and cooking the chicken step can me totally omitted(this recipe does not take nearly as long as it says). The cream cheese and butter don't blend well, I was worried I had done something wrong, but adding the cream completely remedied the problem. Also, more chicken is definitely neccesary to give more substance. I might try lamb next time. A decadent meal...but certainly worth the (very rare) treat.

Nestle® Chocolate Chip Cheesecake

This cheesecake was absolutely fantastic. I used milk chocolate chips instead of semi-sweet because someone said it needed extra sweetness. They were wonderful. I also used a different recipe for the chocolate graham cracker crust. A wonderful guilty pleasure.

Peanut Butter and Jelly Brownies

These took forever to bake and were really just gross. Hubby thought they were terrible, and I agree. And chocolate, peanut butter and jam are three of my favorite foods. Awful.

Fresh Strawberry Tart with Rum Pastry Cream

I made this tart as a Valentines Day dessert and it was a huge hit. It wasn't complicated at all (but a little time consuming) I used whole milk and raspberry preserves instead of apricot. Delicious!

Artichoke Chicken

I was not crazy about this. Maybe it was the artichokes I used, they were rather briney. I followed the sour cream suggestion and it probably helped but I just didnt think this was super flavorful.

Black Bean Lasagna II

This lasagna was fantastic. My husband, a meat lover, loved this vegetarian meal. I substituted black eyed peas for refried beans because I had them on hand and used whole wheat lasagna noodles. Excellent-going into permanent rotation.
