Apple Enchilada Dessert

MMmm! I had something like this at a Mexican restaurant and had to find a recipe just like it. This hit the spot! Really easy to make and with a scoop of ice cream, it's even better!

Charley's Slow Cooker Mexican Style Meat

Very good! I ate a lot of tacos and burritos after making this! I used Tapatio and added a dash of Dave's Insanity Spice to boost the heat. Awesome Mexican shredded beef!

Coconut Shrimp I

Flourless Peanut Butter Cookies

These are unbelievably addicting. First time I made them, I made a second batch right away because I knew they'd go quickly. I used a store brand plain chunky peanut butter and they were just right! My only recommendation is to keep a lot of milk nearby. Peanut butter cookies and milk are the perfect combo.

Banana Banana Bread

Awesome! I love banana bread and this recipe is perfect! I hate dry banana bread and this was nice and moist. I made poured the batter into a muffin pan and it made one dozen. Yummy!

Double Layer Pumpkin Cheesecake

I made this for Thanksgiving and wow it was delicious! There were 4 other pies and this one got the all the rave reviews. To sum up everyone's comments: "Wow, this is SOO good." I even saw my stepsister stealing some from other people's plates!

Green Bell Peppers stuffed with Tomato Lentil Couscous

Very tasty and you can eat the "bowl"! I enjoyed this very much but agree with other reviewers that the bell pepper could have been cooked a tad bit longer. Other than that this recipe is great. I will definitely make this again!

Beer Pancakes

I used a Japanese beer and added some sliced bananas. The pancakes were thinner than normal with a slightly crispy edge but they were so good!! They did have a slight beer taste to them, but I think it was a very complementary flavor, even with the bananas. I will definitely make these again!

Amaretto

This is a great recipe! After I ran out of my Disaronno and found this recipe and decided, "Why not?" I prepared the recipe and refilled my empty bottle. In my opinion it tastes better and smoother. I used a higher quality vodka that was luckily on sale. And you HAVE to let the mixture cool. Alcohol burns off at higher temperatures and it can lose up to 30% of the alcohol if added immediately.

Spritz Cookies II

Just like grandma's! I'm going to make these for Christmas just like my grandma used to do. She always had a huge 3 tiered assortment of Christmas cookies and these were my favorite! This recipe is perfect, thanks for sharing!

Barbeque Seitan and Black Bean Burritos

I've never had seitan but my boyfriend is a vegetarian and wanted to make something with it. So I found this recipe. I was a little skeptical but it was really good! We followed the recipe to a T except we used serrano chilies and whole wheat tortillas. His non-vegetarian friend loved them. We topped them with extra cheese, salsa, and avocados. Next time we want to add some corn salsa. Yummy!

Cajun Seafood Pasta

This is a really awesome dish! I love spicy food and made the recipe as is but decreased the amount of parsley to about 3/4 cup. This is a flavorful and not too heavy like a lot of cream dishes tend to be. Perfect! Thanks.

Crepes

I love ordering these when I go out to eat but the idea of making them at home was intimidating. I thought special tools and skills were required to make them so light and thin but I was wrong! This recipe is awesome and I made beautiful crepes on my first try! I make them all the time now and I top them with some powdered sugar and homemade strawberry compote. Yum!!

Meringue Mushrooms

I love making these. They can be a bit time consuming but definitely worth it. My family requests that I make these all the time, and when I do, they are gone quick! They are super cute and really tasty. This is the perfect recipe.

Day Before Mashed Potatoes

I absolutely love these mashed potatoes. I like to use purple mashed potatoes that I get at the Farmer's Market for some fun color. I also sprinkle in some fresh chives when they come out of the oven. So creamy and moist! I could eat them all by myself!

Down Home Macaroni and Cheese

Very tasty macaroni and cheese. I gave 4/5 only because I'm not a huge fan of Velveeta nor bread crumbs on my mac. I tried this out for a friend who absolutely loved it. It does make for a very creamy mac and cheese, though. If that's what you're looking for then this recipe is for you!
