Spring Sweet Pea Pasta Salad

i really like the tangy lemony flavor of this! i rated 4 out of 5 stars because i doubled the recipe and there was not nearly enough sauce to go around.

Triple Layer Banana Cream Pie Bars

This is delicious and simple. I made a smaller version of this using this recipe's proportions as a guide. It was a hit even though the "bars" crumbled coming out of the dish and turned into more of a triple layer pudding.

Rum Cookie Balls

Made this as written except used coconut flavored rum and rolled them in crushed almonds at the end for extra crunch. Perhaps better with only 1/4 cup of rum? Also, be sure to grind up your vanilla wafers and nuts in a food processor because this really affects the texture!

Mrs. Fields Sugar Cookies

Great! I used 1 cup of sugar instead of 3/4 and sprinkled red sugar sprinkles (before baking) on some and drizzled white chocolate over the tops of the rest (after baking).

Pumpkin Cheesecake Bars

This is a perfect "Thanksgiving season" recipe to bring to autumn potlucks or turkey day celebrations. My mom and I make these every year using a small, rimmed cookie sheet. The result is thinner bars and lots of 'em. YUM!

Cheese Lasagna

this was good, but next time i will only use 3 eggs and less lasagna noodles since i didn't end up using the entire 16 oz package. make sure you season the ricotta/egg/parmesan mixture well with salt and pepper - this may be why some had a "bland" result. also,

Fantastic Black Bean Chili

This was good but definitely different due to the red wine vinegar, oregano, and basil. Still, it was easy to make and tasty with shredded colby jack cheese on top.

Chicken Cordon Bleu I

Yum! I brushed a beaten egg over the chicken before rolling in bread crumbs. Also, I put a small pat of butter on top of each chicken roll before baking. Came out moist and delicious and I will make these again!

Peach Bread

I was not a fan of this, although it could be my modifications: I cut back the oil to 3/4 cup and the sugar to 1 1/2 cups. It came out a little dry and not as peachy as I'd like! Maybe next time I'll add more peaches and use the full cup of oil?

Awesome Slow Cooker Pot Roast

Thought this might be helpful - I used a smaller roast (3 lbs) and only changed one thing. Substituted one can regular cream of mushroom w/ one of the Healthy Choice variety. Still came out too salty! But the gravy was a beautiful color and the beef shredded nicely and was yummy. Will make again using both cans Healthy Choice to cut back on salt.

My husband LOVES this. I only use 1 1/2 jars pasta sauce (I reserve the rest for dipping breadsticks with this or a later meal). Low-fat sour cream works great as well as part-skim mozzarella.

Cottage Cheese Chicken Enchiladas

As written these would be a little too soupy for me. They came out great using only about 1 cup cottage cheese and not pouring anything on top but some red sauce and a little cheese. I also lightly fried each tortilla so they wouldn't be soggy.

Southwestern Bake

Good weeknight meal if you use red. fat sour cream and no-salt-added canned goods. Next time I'll add the tomatoes and green onions as a colorful topping AFTER baking so the onions don't get crunchy. Maybe some sliced black olives would look pretty too? Only used 1 can corn like some others.

Spanish Rice Chicken II

To make this more like my Abuela's arroz con pollo, I used a little less broth (we use about 1 1/2 cups total liquid per cup of rice) and a small packet of Goya seasoning con azafran instead of the paprika and pepper. It was great!
