Flavorful Beef Stir-Fry

Good, simple stir fry! Would be a "5" if it had more seasonings, which I added (garlic, ginger, onion powder, and sriracha).

Lazy Baked Macaroni and Cheese

Eh... I wasn't impressed. I should have taken the advice of others to pre-cook the macaroni. I'll try this again and adjust my rating if it improves.

Saucy Chicken and Asparagus

The reviewers (okay, my husband) were skeptical, but this was a hit! I messed up the recipe (not on purpose). I used cream of mushroom soup instead of cream of chicken (grabbed the wrong can). I cooked the chicken all the way through. I put the cheese on top after I added everything else, except for lemon juice, which I forgot. Then I re-read the recipe, realized how I'd gone astray but still baked it all, covered with foil, for 25 minutes. On purpose: I browned the chicken with onions and garlic, and more than doubled the amount of red curry powder. For having such an "air head" night, this was remarkably, surprisingly good!

Lentils and Rice with Fried Onions (Mujadarrah)

I liked this, but will do as suggested and add more cumin (I used about 1/3 of what others did). The husband, on the other hand, didn't find it to be remarkable. Next time, I'll cook some chicken with the onions to add on top for him.

Best Bread Machine Bread

This is the best! As suggested, I used 1.5 tsp of salt - and I also used a little less oil. I'm sure it'd be great as is or with the tweaks. Can't wait to experiment with the flavors on this recipe.

Zesty Slow Cooker Chicken Barbecue

It was okay, but hubby requested not repeating it. Maybe it would be better with different BBQ sauce as others suggested - or maybe it's a different style of BBQ than this Texas is used to eating.

Slow Cooker Chicken and Dumplings

The original recipe as posted is probably more of a 3/4 - but after modifications as suggested here, it's pretty good. I did the chicken broth, added garlic, thyme and cumin - and finished with some salt and pepper. It'll be even better once the weather gets cold. - Updated: I've been playing with this recipe for about a year, and think I got it: Use 1 can chicken broth, 1 can cream of chicken soup, chicken, salt/pepper/seasonings, and onion. In last hour, add 1 package of biscuit dough. The sauce is less gloopy and the biscuits taste less like biscuits.

Salsa Chicken Rice Casserole

My original review stated I wouldn't make this again, but I've made it over and over. It's easy comfort food. I dump whatever cheese and whatever soup I have. Often, I leave out the soup and it turns out fine.

I wanted to like this... but... it was blah. It lacked all the flavor and dimension that it takes when you add sausage. I won't be making again - there's better recipes for this dish, which is one of my favorites.

Basic Microwave Risotto

I eat this all the time - with a few tweaks. I use regular rice since it's much cheaper, chicken broth since I always have it on hand (also - there's no need for two bowls - just heat up the broth with the onions, and about a tablespoon or less of butter to cut back on the fat. If it's watery - as others have mentioned - just keep cooking it until you get "pits" on the top. (I usually cook it for 11 minutes after adding the wine.) And don't forget salt!

Baked Pork Chops I

This turned out great given how 1. cheap, 2. easy, and 3. bland it sounded. It smelled great and tasted better. -- However, I made two subs: 1. used spray Pam instead of the oil (and it turned out great with far fewer calories) - and 2. used cream of potato soup (since I didn't have cream of mushroom since hubby hates it). Like others, I also used sour cream instead of milk and cut the time down some. This is a keeper!

Slow Cooker Beef Stew III

This seemed really strange - but it works! I did the full 24 hours, and added a few things (just spices). However, next time, I'm going to cook the beef for 24 hours and the veggies for more like 4-7 hours since as is, everything was the color of beef. (Also, I got sick of the smell, but hubby enjoyed it.)

Broccoli, Rice, Cheese, and Chicken Casserole

Well, it's not my new favorite food, but overall, it was good. I made a lower-fat version with fat free cream of chicken soups and regular shredded cheese. I sauted the onion with some garlic in the butter, used some regular rice (cooked in the rice maker) and used fresh chicken, which I baked first in the oven in the same casserole dish that I used to bake the finished product. It was easy and comforting. I'll make this again.

Shepherd's Pie

Well - on the "pro" side, this recipe made a ton of food and cleared out my pantry of that can of cream of celery soup that's been there for almost a year. On the con side, the two cans of soup did make it really soupy, and the canned veggies - kind of gross looking. However, the beef needed the celery flavor for balance. Next time, I'm going to try another recipe for this dish, maybe with fresh veggies instead of canned and with just one can of cream of something soup. However, if I were to make this again, then I would double the beef and the potatoes, keeping the two cans of soup, and make two casseroles. In conclusion: I'm just not sold on this one.

Baked Potato Soup

Loved this! I finished cooking the potatoes in the chicken broth/onion/etc mixture along with the bacon. I also used a hand mixer to get the texture really smooth. Wonderful!

Guy Approved Meatloaf

Recipe works great as is - but I use one pound of ground beef, bread crumbs instead of crackers, and no bacon to cut down on the calories. Hubby loves it. Note that you need to use a chip like Lays since higher quality chips don't disentegrate and get soggy.

Easy Cheap and Yummy Casserole

Good, not great. The cornbread was gritty - maybe I just picked the wrong brand. Hubby said it was better as leftovers and wants it made again, this time putting the cornbread on the botom (maybe baking the cornbread first and then baking the beans, etc, on top?).
