Chinese-Style Baby Bok Choy with Mushroom Sauce

This recipe is versatile but always delicious! Even my skeptical parents loved it (after asking what they were eating)! I often use shallots or red onion instead of green onion, and add a little ginger to the oyster sauce mixture.

Caramelized Brussels Sprouts with Pistachios

Way to make brussels sprouts taste good! I tried to cut down the butter a bit, and it can be a bit vinegar-y in small batches if not careful. Overall great recipe though!

Eggplant Parmesan II

I'm not sure if this is healthy, but it's definitely easy and delicious! Great quick meal for last-minute dinner party :) I follow the directions from other recipes on this site for salting the cut eggplant to sweat out the bitter flavor for 30min before rinsing in cold water, patting dry, and breading it.

Alicia's Aloo Gobi

This is a great Indian recipe for the timid cook! Very easy directions, and pretty cheap ingredients, apart from the coriander and garam masala, which I omitted. I added a little curry powder, increased the cumin to 2 tsp (ground), used tiny red potatoes to make it cook faster, and used broccoli instead of cauliflower.

Leftover Squash Muffins

These were pretty awesome, especially when all you have in stock is a random can of squash. I would use a little less baking powder next time, but I did add shredded apple and walnuts and substituted 1 cup of flour with whole wheat and they were delicious!

Easy Tilapia with Wine and Tomatoes

Very quick and easy- even with only college-kitchen ingredients, a questionable oven, and two girls who don't know how to cook fish. Everyone loved it and now I make it for my family!

Mocha Chocolate Chip Banana Muffins

I like to consider myself a muffin master, but these are the best I've ever made. I bake 2 batches a week- some to mail to friends and the rest for my family. Instant espresso creates an especially delicious mocha flavor!!!
