King Crab Appetizers

Super easy!! Couple changes I made....I used 2 cans crab meat - same amounts of everything else; probably more onions too. Also used the cresent rolls sheets - delicious!!

Best Big, Fat, Chewy Chocolate Chip Cookie

These are really great! Best chocolate chip cookie I have ever made!! Only change I made was to double the recipe, but keep the amount of choc chips to 2 cups - still plenty chocolatly enough for me!! My 3 boys (and husband) inhaled the first batch - off to make more! :)

Smoky Chipotle Hummus

If I could give this more stars, I would. It is sooo yummy!!!!! I loved the added kick from the peppers and the color is beautiful! I love regular ol' hummus - but no more - this is IT for me!!!

Black Bean Hummus

Very good - not very pretty. Kinda turns out a strange gray/purple color. Served with pita chips and veggies. I think next time I would double the garlic and spices. I also would add more olives. But still good as is!

French Silk Chocolate Pie I

Cranberry Pistachio Biscotti

Oh my....these are AMAZING! I followed the recipe very closely. (I only added 1/2 t. of cinnamon and doubled the almond extract) I think the key is that you make the "logs" 2x12 inches and the bicotti are like small cookies. Cut them right out of the oven with a very sharp knife and they shouldn't crumble. I was able to get 24 cookies. I will be making another batch of these.

Beefy Lentil Vegetable Soup

This soup was really good. It makes a lot of soup!! I added ground turkey and used spicy V-8. I also added a can of green beans at the end. It was very easy and very filling.

Tomato Chicken Parmesan

Fantastic! I pounded the chicken thin and I also used premade spaghetti sauce and added some dicecd tomatoes. I used panko bread crumbs and added Italian seasoning and parm. cheese to the bread crumbs. Put sauce & tomatoes in bottom of pan placed chicken on top and baked for 20 min. then added mozz. cheese and baked for additional 10 min. (at 400) Served with angel hair pasta and a spincah salad. This would be a great dish to impress company!!

Basic Flaky Pie Crust

Now that I found this I am making pies daily!! It is sooooo easy to whip up in your food processor - and I don't always chill this before using it. The only change I make is using butter instead of shortening, only because my family like the flavor better. You CANNOT go wrong with this pie crust!!!

Warm Apple Buttermilk Custard Pie

This was REALLY rich!! My famliy loved it, but I thought it was too sweet. I think next time I won't put on the topping and see how it turns out. I loved the custard and the apples together! Yummy!!!

Cheesy Zucchini Casserole I

I thought this was really good. The bread gets really buttery and yummy. The leftovers were just OK. Better to eat right away. Great way to use up some of the zucchini out of our garden!!

Sausage-Stuffed Eggplant

Very yummy and pretty darned easy. I made this in the afternoon, then cooked it off at dinner time. Some changes I made were I added onion and green pepper when cooking the meat. I also used both sausage and hamburger. I added fresh parsley & basil and omitted the egg. I don't think the egg was all that necessary. My family all thought the dish was wonderful - we actually had extra filling, so I also filled a couple green pepper. Yum!!

Egg and Cheese Puffs

These are great for an easy breakfast for company or yourself! They feeze great and can be thawed in the fridge overnight and just popped in the microwave for easy warming. They are so versitile and easy to make to your liking. I usually use ham to make it even easier and add whatever veggies and cheese I have on hand. Yummy....also the butter is NOT needed!!

Simple Country Ribs

Wonderful! Made these after church and it was a snap. They grill very nicely and you are able to control how brown you want them, since they are already cooked thru. Family LOVED them!!
