Slow-Cooked Corn Chowder

Very good, but not 5-star worthy as written. I added about 2 cups of the frozen hash browns and used a meaty ham bone, which gave this great flavor. I also couldn't figure out why the 2 T. butter was needed, so instead I used it to saute the onion before adding it to the crockpot.

Ham and Cheese Breakfast Quiche

Yum! I made this for my husband, but I can't stay out of it! I was looking for a way to use up both ham and heavy cream, so this fit the bill, though I think this would still work with milk. I did use cheddar cheese out of necessity and baked the crust for an extra five minutes. I will definitley make again when we have leftover ham.

Zucchini Cream Pie

This is very good and a great way to use up zucchini (one can only bake so many loaves of zucchini bread). I'm only giving 4 stars because the amount of sugar called for is WAY too much. I started with 1 cup, tasted it, and decided not to add any more. Also, the baking instructions are vague. I baked mine for an additional hour.

Cabbage-Carrot Casserole

This is really good! Followed the recipe to the letter, though I did use reduced fat cheese for health reasons, and I grated some black pepper on the top (along with the paprika). Thanks for sharing, Paula! I will make this again for sure.

Spanish Squash

We enjoyed this recipe, but I think it would have been bland had I not doubled both the chili powder and cumin and used diced tomatoes w/ green chilis in place of regular diced tomatoes. I sauteed the onions with the beef, then added the squash and other remaining ingredients and simmered for 30 minutes. I would make this again with these tweaks.

Pan-Fried Mustard Mayonnaise Tilapia

The flavor of this was very good, however, I had the same problem with the breading not staying on. I did everything that other reviewers suggested (making sure fish was dry, pressing the bread crumbs onto the fish, flipping it carefully), and I still had problems. I'm not sure what else to try to fix the problem.

Chocolate Zucchini Cake III

This was excellent! I did as others suggested and reduced the oil to 1 c. (didn't replace with applesauce or anything else), and the cake was still very moist. I also subbed the nuts with chocolate chips. This is a keeper.

Zucchini and Potato Bake

This was great. I've had this saved in my recipe box forever and I'm sorry I waited so long to make it. I did as reviewer Crystal S. suggested and used fat free italian dressing in place of the olive oil to save on fat/calories. I also used garlic powder instead of sliced garlic, as I was afraid it would burn. I mixed the garlic powder and the other seasonings with the bread crumbs. One hour was the perfect amount of time.

Easy Cajun Grilled Veggies

We really enjoyed the flavor of the marinade. My yellow squash had gone bad, so I ended up just using zucchini and onion, though I might try this again with eggplant, too. I marinated my veggies for several hours and did cook them longer than the 5 minutes.

Baked Ziti I

I made this as directed, other than substituting low/reduced fat ingredients where possible. I didn't care for the sour cream in this recipe and while the end result was OK, I think I will try another baked ziti recipe next time.

Cabbage Saute

I was looking for a healthier way to prepare cabbage that didn't involve bacon, and this was it. The only change I made was to cook longer than the 5-7 minutes suggested in step 2. This is a repeat for sure!

Spicy Orange Teriyaki Marinade

I only used half the chili paste called for and thought this was still plenty hot, though maybe the variety of chili paste I purchased is hotter than what the recipe submitter uses. I also used rice wine vinegar in place of the cooking wine. I admit that I did not use this on pork or chicken, but instead chose to marinate some thinly sliced stir fry steak. Unfortunately, apparently neither DH nor I are big fans of orange marmalade, so I probably won't try this again on pork or chicken.

Make-Ahead Pizza Meat Loaves

I really liked this. I did make a couple of changes, based on our preferences and what I had available. I baked this as one single meatloaf (took about 1 hr and 20 minutes at 350), used half vension and half beef, shredded cheese, Stove Top whole wheat stuffing, and sauteed the onion and green pepper before combining with the other ingredients (DH doesn't care for crunchy things in his meatloaf). I wouldn't hesitate to make this again, with or without my changes.

Sausage Pepper Skillet

Well this recipe was a great surprise. We really enjoyed this. Plus, it was healthy and quick. I made as directed, except I had to substitute a white onion for the red. I wouldn't hesitate to make this again, though I might try adding diced tomatoes so there is more of a sauce for serving over rice or pasta. Even so, this was great as is.

The Best Parmesan Chicken Bake

This was pretty good. I used "Best Marinara Sauce Yet" for the prepared marinara called for. I liked the croutons, but I think next time I'd crush them up, as I would've liked more even distribution.

Cajun Roast Beef

I read through all the reviews before making this, and couldn't decide how long to leave the meat in the crockpot. We ended being away from home longer than anticipated, so the meat cooked the full 10 hours. By that time, the meat had cooked for so long that it shredded without any effort. We'll eat the leftovers on sandwich rolls. I did leave out the horseradish (didn't have any, and I don't care for it anyway) and used cider vinegar instead of malt. I would make this again.

Momma's Wine Cake

This was easy to throw together and turned out very moist. I chose to "flour" my pan with the cinnamon-sugar as suggested in the foonote. It has a delicate flavor. My husband ate his slice with strawberry jam, but I can see this going well with strawberries in a lite syrup.
