This cheesecake is simply divine! I tried a different recipe on here once that used ricotta cheese, and boy was it awful. But this recipe is gold! I followed the directions exactly and it turned out perfect. Even my father-in-law, a pure-bred Italian cook, loved this cheesecake and didn't have any suggestions to offer. Which NEVER happens. :) This is my recipe from now on! One tip I would offer is to make sure the cream cheese is room temperature before starting.
