Fat Pete's Fudge

Reviewed: Feb. 14, 2014
Taste is good, but I'm only giving 2 stars because even after letting it refridgate overnight, it is still the consistency of nutella. I followed the recipe precisely, and the end product did not set up even after an overnight. I'm not sure where I went wrong. So now I have a 9x13 pan of chocolately goo.

Slow Cooker Venison Roast

Reviewed: Oct. 2, 2011
Very tasty and definately makes it less gamey tasting. I opted for a low-sodium option using Herb-ox no sodium beef broth instead of the onion and mushroom soups, and sauted an onion and mushrooms for flavor. Also used low sodium soy sauce.

Very good. Husband gives it two thumbs up. I made this with fresh grouper instead of chicken.

Neat Sloppy Joes

Reviewed: Sep. 18, 2010
very good recipe. I didn't feel like cooking, and this was easy and very tasty. I sub'd no sodium tomato puree for the soup, since I am sensitive to salt and it allowed me to season it to my liking. So much better than packaged or canned and so much better for you without the additives.

Bourbon Street New York Strip Steak

Reviewed: Jul. 18, 2009
Like others, I didn't use nearly as much burbon as the recipe calls for. I used about a shot cup worth, if that. Also used enough brown sugar to make a nice rub out of it. Let marinade for about an hour before grilling. Very good flavor and the burbon wasn't overwhelming. The sugar makes a nice carmelization on the outside of the meat.

Spicy Grilled Shrimp

Reviewed: Jul. 18, 2009
Very good. I didn't follow the recipe (I rarely ever do) but read the recipe, then headed to the kitchen to throw it together. But it was very good. Used veg oil, as I was out of EVOO, used crushed red pepper instead of cayenne. Nice and spicy.

Chicken Pot Pie IX

Reviewed: Mar. 1, 2009
followed several of the other suggestions, pre-baked my pie crust for a few minutes. Sautee'd onion, 2 cloves garlic and celery in butter, then added the chicken to brown, then added chicken broth and veggies to simmer before adding milk/flower to the entire mix. Also added extra pepper, thyme and chicken seasoning. Finally added 1/2 cup of white wine to the mix and put about 1 cup of shredded cheese on top of the mix before adding the top crust and cooking for 40 mins.

Broiled Grouper with Creamy Crab and Shrimp Sauce

Reviewed: Jan. 1, 2009
excellent recipe. I paired this with some wild rice and "pan-fried asparagus" for hubby's b-day dinner. He thought it tasted like a high end restaurant meal. My son thought it was the best grouper he'd ever had. And we eat grouper alot.

Pan-Fried Asparagus

Reviewed: Jan. 1, 2009
made this for hubby's b-day dinner. I had to use fresh green beans because asparagus is not in season and I couldn't find any. We love this recipe. Like others, I added mushrooms and I waited to the end to add the garlic.

Shepherd's Pie VI

Reviewed: Dec. 16, 2007
Good dinner recipe. Great comfort food. I added mixed veggies (beans, carrots, peas, corn) instead of the carrots layer and since I was out of shredded Chedder I subbed some American and Mozzerella. The recipe was good as directed but lacks a little flavor in the potatoes. I took some advice and put the Worcestershire in the meat as it cooked as well as 2 cloves of garlic. I'm sensitive to salt, so did not try the gravy recommendation. I will try it with the sourcream recommendation in the potatos next time for more flavor.

Caramelized Baked Chicken

Reviewed: Nov. 22, 2007
Definate hit with the family. We had just traveled home on Thanksgiving after a week of camping. I was not planning to do the traditional dinner, and was just looking for something easy to make after a day in the car. I started this recipe only to realize I did not have honey. I was following the tips for the thicker sauce w/ boneless breasts. Since I was out of honey and the stores were closed I substituted maple syrup. THis turned out fabulous. Sweat and spicy. My husband thinks the sauce would also go great with those little smokies sausages we make for parties.

Cornbread that is a Meal

This one was ok. A little bland. The hubby added ketchup for his flavor. The 13yr old boy loved it and went back for 3rds.

Herbed Pecan Crusted Scallops

Reviewed: Feb. 25, 2006
Very good recipe. Made with jumbo scallops that took much longer to cook than recipe states. The paste also makes a great seasoning for stirfry veggies to go along side these scallops. Easy to make, and a nice use of those herbs from your home garden.
