Chicken Breasts with Balsamic Vinegar and Garlic

Delish! I couldn't get a bay leaf, but still very good. Next time I'll use less garlic. Can still taste it today.

Awesome Chicken and Yellow Rice Casserole

Very good with a few alterations. I've made it just as the recipe suggests, but it's pretty time consuming, so this time I did some shortcuts. I slow-grilled chicken breast (to keep chicken moist) in a pan, while 2 (10 oz) packages rice were cooking. Removed chicken from pan to cool then added olive oil, 1 med onion, one green pepper, water chesnuts (all rough chopped) to pan to saute till soft. Shredded chicken, then added pimentos and 1 can diced tomatoes to veggies, sauted for a few more mins. Tossed chicken, veggies and rice togther and voila! Yum! Next time will probably add another can of tomatoes since this recipe could be a little more moist. Also will try to add some curry powder and maybe some crushed chili flakes.

Chicken with Asparagus and Roasted Red Peppers

My husband loved this. I served it over garlic mashed potatoes, and having made sauce by adding more chicken broth, poured that over the whole thing. He said it was like a dish from a restuarant. This one's a keeper! So's the husband. :)

Slow Cooker Guisado Verde

Delicious! I made this with beef roast rather than pork, and I also added 2 potatoes chopped into small pieces. I also only used about 1/4 of a jalapenjo as it was very hot and chicken stock rather than water. It was sooo good! We ate it as a stew with tortillas and it was very authentic tasting. Will definitely be making this again.

A wonderful soup. I too used 4 cups of chicken broth and omitted the water. I also used dried herbs, more than doubled the pasta, and added a can of garbanzo beans. I served it with a freshly baked sourdough baguette. It was delicious! I'll definitely make it again, although with even more beans.

Spinach and Feta Pita Bake

This is so easy and so good! I didn't use mushrooms since my boys wouldn't like them. They came out crispy on the edges and my 2 yr. old twins loved them. Will definitely become a standard!

Ken's Spicy Curry Chicken

This is a really easy and yummy recipe, but I found it a little lacking in flavor. I added a little extra fish sauce, probably 4 tbl. spoons, and about 3-4 tbl. spoons brown sugar. Alot of Thai recipes are better with brown sugar. I served it over jasmine rice, and everyone loved it, including my two yr. old twins.

Mediterranean Lemon Chicken

This chicken was so easy and yummy! I used thighs and chicken tenders, so everyone was happy. My 20 month old twins ate 4 strips each! A big hit!
