thank you for the recipe. i used it as a guideline, to use fresh ingredients. it takes longer, but for me it's worth the extra time. the night before, i brown the roast in oil, set it aside, add three tablespoons of butter, saute one large diced onion and two stalks of chopped celery for five minutes, add about a cup or so of sliced mushrooms saute five minutes more. add two tablespoons flour, cook for two minutes, add two cups beef broth, and cook a few minutes more. season with tsp thyme, half tsp rosemary, tsp salt, half tsp pepper. put it all in the crock, take it out of the fridge in the morning, cook on low for 7-8 hours. strain the vegetables out of the gravy before serving. delicious. my new favorite meal, and a hit with guests.
