Quinoa Tabbouleh

Pumpkin Pancakes

These were great! I liked them a little thicker, so I added about a cup of batter and didn't flatten them out. After we put the batter on the griddle, I added some ground flax, chopped walnuts and a little brown sugar. Then when they were flipped over to finish cooking, the nuts toasted and the brown sugar caramelized. Plus the nuts add some protein and fiber.

Cheesy Potato and Corn Chowder

Yum, yum, yum! We loved this recipe. I did make a few changes to it, by adding about 4 grilled chicken breasts, chopped up. I did a bag of frozen corn because I think it has more flavor and a can of creamed corn for a little thicker consistency. I used shredded Mexican blend cheddar cheese and left out the chiles because my one year old wouldn't have done well with them. We also added a side of veggies to lighten it up, for those concerned about too many calories. This was simple and we have a lot of leftovers.

Curried Hummus

This is the perfect flavor for hummus.. it spices it up enough, but isn't overpowering. I usually love the roasted red pepper hummus.. but this is my new favorite.

Downeast Maine Pumpkin Bread

This was great! Very good consistency and the spices were the right balance. I added about 1/2 cup chocolate chips to one of the loaves and it was REALLY good.

Banana Sour Cream Bread

I have never been able to get a moist tasting banana bread until this! I have used up to 6 bananas in previous recipes, but I used only 3 in this one.. and my family loved it. I did cut the recipe in half, and as suggested, added a crumb topping with pecans, brown sugar and butter.

Fish Tacos

Great recipe! My husband and I loved this.. I don't have a deep fryer, so I cooked it in a shallow amount of veggie oil.. and it splattered a lot (I'm don't fry things very often). So I think the trick is to add more oil next time.. but would appreciate other suggestions. The taste and texture were awesome. I used pre-shredded cabbage, and sour cream instead of yogurt. I thawed out some frozen cod.. and it was fine. Adding avocado wedges is also great. Thanks for cracking the code on these So Cal favorites.

French Onion Soup I

Yum, yum, yum. We really enjoyed this.. I did not add any water, just a 32 oz. can of beef broth. I also added worchestershire as was suggested. Next time I will try to add thyme, but without the changes I think this is a winner.. and it's so quick!

Angel Chicken Pasta
