Collard-Kielbasa Soup

I am trying to figure out how the heck anyone made this soup with only 1 quart of water! I ended up using about 5 times that- even after the collards cooked down the soup resembeled just a big pot of moist veggies. I ended up having to transfer the whole thing to a much larger pot just to accomodate the extra water I had to add just to make this look like soup. Since the water diluted all the flavor from the kielbasa ( I also had cut that down to one package like a previous review recommended),I had to throw in a bunch of beef bouillon cubes to give the broth more flavor. Also, I would recommend just cooking the bacon separately, removing the bacon from the pan then sauteeing the onion, garlic and green pepper in the bacon grease. I wasn't able to get the bacon crisp cooking it with the onion and pepper, which added a lot of extra moisture. All in all I like the ingredients and concept, but the recipe definately needs tweeking to get a decent bowl of soup.

Simple Garlic Shrimp

This was ungodly delicious! I made this exactly as stated except for adding a little more garlic, because I am a garlic fiend. I served it over sphaghetti squash. My only complaint is that it should state "1 serving" as I could have finished the whole thing off myself. I made this in a cast iron pan which gave the shrimp a nice little crust. Don't skip the caper brine, it gives the dish a nice depth of flavor!

Kielbasa Stew

This was great. I substituted tomato paste and a can of diced tomatoes for the tomato soup. I also added a little more cabbage ( it was a package of pre-shredded cabbage for coleslaw). I added a smidge more water to compensate for the extra cabbage, and threw in a package of dry onion mushroom soup mix for fun. I thickened the stew with some wondra flour/water before adding the sour cream, and served it over instant mashed potatoes. Very comforting! I will definately make this again.

Mama's Best Broiled Tomato Sandwich

This was awesome! I replaced the oregano with Italian seasoning, and didn't bother to measure anything, and it turned out great. Definately pairs well with a cream soup for a quick and easy dinner after work!

This was great! I stuck to the recipe exactly except for adding some minced garlic and onion powder to the beef. This recipe was super easy and I didn't find it too salty at all. I may add some cheese next time- kept thinking the whole time I was eating that the only way this would be better is with a big old classy plop of cheez whiz on it!

This was great!! I mixed a little chorizo with the rice and topped it off with eggs over easy. I also had it without the rice and it was still good! I will definately be making this recipe again!

Blackened Salmon Fillets

This was great. I just made one filet since I was just cooking for me. I sprinkled the salmon with Creole seasoning, then just sprinkled some basil, oregano, and thyme without bothering to measure. I used a well seasoned cast iron pan to cook it. The good thing about this recipe is you don't need to be precise with the spice amounts, and it still turns out great.I also think the key is to use a thinner filet so it cooks all the way through before it "overblackens". I will definately be making this one again!

Carrie's Catfish Larue

This was really good. I used fat free olive oil cooking spray to sautee the veggies and sear the fish to reduce the fat content, and it worked just fine.I will definately make this again, only next time I will try addding some fresh minced garlic.
